Spiced Yogurt Muffins
6-1⁄2 C Dannon plain fat-free
Greek yogurt
4 C water, room temperature
1 box (5 lbs) Gold Medal® Muffin
Mix, Whole Grain Variety
3 T McCormick pumpkin pie
spice
2 T McCormick Chipotle cinna-
mon

Combine yogurt and water in mix-
ing bowl. Whisk until blended. Set
aside. Add spices to dry muffin mix
in a large bowl. Add yogurt and water
mixture to the muffin mixture. Mix
until just blended. Don’t overmix.

Using a scoop, portion into greased
or lined muffin pans. Bake at 350F for
24 minutes, or 17 to 20 minutes in a
convection oven, until the tops are
golden brown.

months ahead. Kwanzaa also presents
an opportunity to focus on family,
community and traditions — which
already is a hallmark of the holiday

• Umoja: Celebrate unity by gath-
ering together with other African

• Kujichagulia: Encourage the
practice of self-determination by set-
ting goals or resolutions and seeing at
least one or two through to fruition in
the weeks to come.

• Ujima: Organize a community-
wide effort, such as helping to fix
up a neighborhood garden or raising
money to support a less fortunate fam-
ily, to celebrate collective work.

• Ujamaa: This is the principle of
cooperative economics, and can be

Combine maple syrup and vanilla
extract in a small glass container; set
aside. In a small bowl, dissolve salt in
water. Pour water into container with

Panettone French Toast
4 1-inch slices panettone
2 eggs
1/3 C half & half
1/2 t cinnamon
1/8 t nutmeg
1 t sugar
1/4 t orange zest
2 T butter

Arrange panettone slices on a piece
of waxed paper in a single layer. After
10 minutes, turn over slices. After 10
minutes, combine remaining ingre-
dients (except butter) in a measuring
cup. Whisk briskly until thoroughly
combined. Melt butter in a nonstick
skillet over medium heat. Pour egg
batter into a pie plate and dip each
slice of bread, turning once to coat
both sides evenly. Place the dipped
bread slices in the skillet in a single
layer and cook until lightly browned.
Turn and cook the other side. Serve
with maple syrup. Yield: 2 servings.
