As lifelong Delawareans, they’re not only producing exceptional oysters - they’re also pioneering a distinctive floating longline system, the only one of its kind currently in Delaware.Their oysters float in mesh bags at the bay’s surface, gently tossed by the tide. This constant movement strengthens the oysters, producing firmer meat, more bottomless cups, and a more distinct flavor profile shaped by their environment - a true expression of merroir. The result is a clean brine up front with a buttery, slightly sweet finish. As one chef described it, “It’s like getting hit with a wave in Rehoboth as a kid.”Each oyster begins as a seed about the size of a pinky nail and grows to market size in five to seven months. Throughout that time, they are hand-sorted, cleaned, and rotated. These establishments have a built-in character that distinguishes them from newer structures. Not surprisingly, they also have history.Heirloom is the first of three restaurants in Victorians on Savannah Road. Dentist J.B. Robinson built the circa-1899 house from a catalog design, but when current owner Meghan Lee first saw the home, it had dated wallpaper, 1970s-era carpet, and a tiny kitchen. She made significant renovations but kept the exquisite woodwork and corner fireplace. The award-winning restaurant features a seasonal menu, an extensive wine list, and fanciful cocktails.Next door, Raas is an Indian restaurant in what was once a private home. One former owner was Lewes Mayor Otis Smith, who also owned the menhaden fish factories on Lewes Beach. Built in 1899, the Queen Anne-style home has housed Ocean Retreat Day Spa and Rick Bell’s Harvard Business Services. India was once part of the British Empire, so the ambiance is not out of character for the cuisine. Raas is now under new management, with updated pricing and continued hospitality from a seasoned team.Bramble & Brine at The Buttery is located in the Trader Mansion, built in 1894 for a sea pilot. Many still remember it as The Buttery, which moved there in 1999. The property has changed hands over the years, including a stint as 2nd Street Tavern, before Megan Kee took over in 2022. Each room has a distinct feel, and longtime residents appreciate nods to local history, including the Pink Pony lounge.Nearby, Striper Bites is housed in an 18th-century building once owned by the Maulls, one of Lewes’ oldest families. However, Olive & Oats in downtown Lewes is a younger sibling.Spanish-style tapas dishes include potatoes with saffron and harissa sauce, roasted garlic hummus, and jumbo shrimp with smoked paprika and olive oil. Large plates are also available.In France, Nice sits on the Mediterranean coast. Thierry Langer, from Nice, features a French delights menu section at Kaisy’s Delights. Items include ratatouille, a blend of roasted vegetables and herbs, and quiche. The restaurant originated in Rehoboth Beach but now resides in the landmark bank building in downtown Millsboro. Austrian dishes are also featured.The newer Sirocco Food & Drink in Rehoboth focuses on the European side of the Med, especially Greece and Italy. Semra’s Mediterranean Grill, the reigning OG of Middle Eastern cuisine on the coast, features recipes from Semra Tekmen’s family. Her husband and co-owner, John, is proud of the gyro meat turned on a vertical spit. Some places buy precut meat, he notes.Nearby, Aroma Mediterranean Cuisine is owned by Murat Tan, who left Turkey for the United States in 1989. The extensive menu includes a flight of salads, the Aroma with arugula and feta, piyaz with cannellini beans and sumac, and Shepherd’s with tomato, cucumber, onion, and feta. There are also dip platters and hummus flights.For quick-casual and takeout options, try Kabab Falafel Addiction on Route 1, located between Lewes and Rehoboth. Falafels come as a 10-piece appetizer, a salad topping, or a sandwich.RB Kabob & Grill in downtown Rehoboth offers the expected kabobs, as well as fattoush, a salad of tomatoes, cucumber, and romaine with pomegranate dressing, Greek salad, stuffed grape leaves, and falafels.For fusion, opt for the Greek quesadilla, a mix of feta, mozzarella, spinach, and Kalamata olives.
