Crispy Coconut Fish Tacos with pineapple salsa

Ingredients Method

1 1/3 cups white self-raising flour Sift 1 cup of the flour into a bowl. Whisk in beer. Season. Set
1 cup mexican-style beer aside.
vegetable oil, for deep-frying
500 g firm white fish fillets, cut into 1.5cm fingers In a large saucepan, heat oil for deep frying on high until a
1 cup panko breadcrumbs little flour sizzles when added (170°C).
3/4 cup shredded coconut
3/4 cup greek-style yoghurt Dust fish pieces in remaining flour, then into dip into batter,
1 tbsp lime juice wiping of excess. Coat in combined crumbs and coconut.
1 tsp cayenne pepper
12 taco shells Working in 2 batches, deep-fry fish 3-4 minutes, until golden
2 cups shredded lettuce and crisp all over. Drain on paper towel. Keep warm.
Pineapple salsa
1/2 small pineapple, peeled, finely chopped Make pineapple salsa: In a medium bowl, combine all
1 lebanese cucumber, finely chopped ingredients. Season.
1/2 small red onion, thinly sliced
1 tbsp lime juice In small bowl, stir yoghurt, juice and half cayenne together.
(serves 4) Season.

Fill warmed taco shells with lettuce, pineapple salsa and
fish pieces. Drizzle with yoghurt dressing and sprinkle with
remaining cayenne.

Tips: Try using ling, flathead or blue eye travalla for this dish.

Spiced Sweet Potato Tart Method

Ingredients Preheat oven to 200°C (180°C fan-forced). Grease a 27cm (top
40 g butter measurement) enamelled frying pan or a 22cm springform
2 medium (300g) brown onions, sliced thinly cake pan; line base and side of cake pan with baking paper.
2 cloves garlic, chopped finely Place on an oven tray.
1 medium (200g) red capsicum, chopped finely
1 cup (120g) almond meal (ground almonds) Heat butter in a medium frying pan over medium heat. Cook
1/4 cup (20g) grated parmesan the onion and garlic, stirring occasionally, for 15 mins or until
1/2 tsp finely chopped fresh rosemary caramelised. Add the capsicum; cook for a further 3 mins
1 egg, beaten lightly or until soft. Remove from the heat; cool for 5 minutes. Stir
3 large (1.5kg) orange sweet potatoes in half the almond meal, the parmesan, rosemary and egg.
5 medium (600g) zucchini Transfer to the base of frying pan or cake pan.
1/4 cup (60ml) extra virgin olive oil
1 tsp ras el hanout Cut unpeeled sweet potatoes into 2mm slices lengthways and
2 tbsp currants zucchini into 1mm slices lengthways. Combine oil and spice in
2 tbsp extra virgin olive oil, extra a small bowl. Brush sweet potato slices with oil mixture. Lay
baby coriander, to serve 1 slice of zucchini over each sweet potato slice. Roll each into
a spiral and stand, spiral-side up, on onion base. Press lightly
into base to secure rolls. Sprinkle over remaining almond
meal and currants. Drizzle with extra oil; season.

Bake the tart, covered with foil, for 30 mins. Remove the foil.
Bake for a further 20 mins or until top is crisp & sweet potato
is tender. Cool a few minutes before scattering with coriander.

Tips: You might need a second pair of hands to hold the first
few rolls in position. Not suitable to freeze or microwave.
