Fried Eggs & Spiced Yoghurt Sauce

Ingredients Method
cooking oil spray
4 free-range eggs To make dukkah, heat oil in a 22cm frying pan over medium
1/2 cup (140g) greek-style yoghurt, warmed heat; cook garlic, dried mint and spices, stirring for 1 minute or
2 tbsp loosely packed fresh mint leaves until fragrant. Spoon into a bowl; set aside.
2 wholemeal pitta breads (170g), char-grilled
Wipe out pan with paper towel. Lightly spray pan with
Dukkah cooking oil. Heat pan over medium heat; cook eggs for 4
2 tbsp olive oil minutes or until whites are set and yolks remain runny. Add
1 clove garlic, crushed yoghurt to pan; remove from heat.
1/2 tsp dried mint
1/2 tsp sweet paprika Sprinkle eggs with dukkah and mint leaves; drizzle with
1 tsp cumin seeds spiced oil. Season to taste. Serve with pitta bread.

Winter Vegie Bowl Method

Ingredients Pre-heat oven to 200°C. Line a large tray with baking paper.
800 g jap pumpkin, unpeeled, cut into thin wedges Place pumpkin on tray; drizzle with oil. Season. Roast for 30
2 tbsp olive oil minutes or until tender and golden.
4 eggs Meanwhile, place eggs in a saucepan of cold water. Bring to
450 g packaged microwavable brown rice the boil; boil eggs for 4 minutes. Drain. Place eggs under cold
120 g green kale, stalks removed running water until cool enough to handle. Peel eggs; halve
160 g mild blue cheese, cut into 4 wedges length-ways.
1/2 cup (50g) roasted walnuts, chopped coarsely Make parsley and shallot dressing: Combine ingredients in a
2 tbsp pepitas (pumpkin seed kernels), toasted small bowl. Season.
2 tbsp linseeds, toasted Heat rice according to packet instructions.
Thinly slice kale leaves; place in a large bowl with half the
Parsley and shallot dressing dressing. Using your hands, gently massage dressing into kale
1 shallot (25g), chopped finely to soften the leaves.
2 tbsp finely chopped fresh flat-leaf parsley Place kale and rice in serving bowls; top with pumpkin, eggs
1 clove garlic, crushed and cheese. Sprinkle with walnuts and seeds; drizzle with
1 tbsp dijon mustard remaining dressing.
1/4 cup (60ml) olive oil Tips: Recipe can be prepared ahead of time; add dressing just
1/3 cup (80ml) white wine vinegar before serving.
