Ingredients for the salad
80 gm assorted salad leaves (iceberg, romaine, lolloroso)
7–10 gm dry mixed seaweed
5 gm toasted sesame seeds
5 gm toasted flax seeds
1 tsp shredded nori seaweed
Fresh plum
Ingredients for the dressing
6 tsp virgin sesame oil
2 tsp rice vinegar
1 tsp ume plum pickle, pitted and chopped
1 tsp mirin
½ tsp honey
½ tsp light soy sauce
A dash of white pepper
A pinch of sea salt
METHOD
• Put the dry seaweed in a large bowl and fill it with cold water. If you
like your seaweed crunchy, soak it for 5 minutes and if you like it
more tender, soak it for 10 minutes.
• To make the dressing, combine all the ingredients in a small bowl
and add oil while whisking.
• Drain the seaweed and squeeze out excess water with your hand.
• Add the seaweed along with the assorted salad leaves in a large
bowl, pour dressing and sesame seeds. Toss thoroughly to mix.
• Garnish with flax seeds, shredded Nori and fresh plum slices
