valleys and micro-climates allow us to deliver grapes

The Dolomitic soils, nowhere else to be found, are
rich of limestone and magma. The poorer soil forces
the vine to work harder in the growing season and
grapes are richer.

analysed each year ultimately assuring full traceability

them from burning in the final stages.

HAND-HARVESTED.

Our growers spend 600 to 900 hours in the
vineyards: up to ten times more than other Pinot
Grigio regions.
We practice multi stage harvest to ensure that only
ripe and healthy grapes are picked.

FORTE ALTO
(“THE HIGH FORT”
IN ITALIAN)

refers to the ancient castles and fortresses that are
typically found in the Alpine landscape –which is
where these wines come from.

Wines are crafted from hand-picked grapes at the
foothills of the Dolomiti, a UNESCO World Heritage
site with unique soil characteristics.

Healthy grapes are selected by our growers and
picked only when they reach a perfect stage of
ripeness, ensuring a final product of superior quality.

Soft pressing and stainless-steel fermentation and
ageing allows the wines to retain delicate freshness,
approachability and the unique character of grapes
grown in the Dolomites.

PINOT GRIGIO.

Pinot Grigio was originally introduced in the Adige valley around
1950 to produce a Rose wine. It was only after strong enological
progress in the 1970s that wineries were able to obtain a white
wine rich in flavours, more supple and with a lower acidity.
Pinot Grigio is produced with grapes from the vineyards along the
Adige and Noce river, where it finds its ideal habitat, thanks to the
fertile soil.

VINIFICATION
The grapes are strictly hand picked and delivered to the winery within a few
hours. Here they are selected and then gently pressed with pneumatic presses.
Then the must is cooled at 59°-62° F and left for an entire night to clarify.
The next day the yeast is added and the alcoholic fermentation at controlled
temperature (61-64°F) is initiated. At the end of the fermentation the run off takes
place and the wine is left on the lees, until it is bottled.

CHARACTERISTICS
Colour: Straw-yellow
Fragrance: Pleasant, delicate and fruity with a floral hint of chamomile
Flavour: Dry, elegant with a delicate acidity

PAIRINGS
Excellent with appetizers, vegetables, white meats, poultry, fish.
and shellfish.

PINOT GRIGIO ROSÉ.

Rosé wine from Pinot Grigio has produced in Trentino since the
1950s. Our winemakers have re-interpreted in a modern and food-
friendly way. It is made from a selection of estate Pinot Grigio plots
of the Adige Valley, where silt and dolomitic rock create unique
soils and the valley’s micro-climate provides for an excellent
ripening of the grapes, naturally delivering an optimal balance
between acidity and freshness.

 

VINIFICATION
Sustainably farmed grapes are harvested by hand at the end of August - first week
of September. After soft pressing and destemming, the must is cooled to 12°C and
left in contact with the skins directly in the press for about 8-10 hours. Then, the
must is collected and a soft pressing of the skins is carried out up to a maximum of
0.4 bars in order to limit the extraction tannins.
The must is then filtered and fermentation begins with selected yeasts at 16-18
°C, for about 12 days. Then the wine is set to rest on its lees for 3-4 months and
bottled.

CHARACTERISTICS
Colour: delicate copper pink.
Fragrance: red berries aromas mixed with hints of citrus fruits, like pink grapefruit,
and delicate floral notes.
Flavour: pleasant minerality with a lively and refreshing acidity.

PAIRINGS
Ideal as an aperitif but also excellent complement to any vegetable-based
Mediterranean dish, goat cheese and almonds, raw and oven-baked seafood
including tuna, salmon or prawns.

CHARDONNAY.

Chardonnay is one of the international varietals that best adapts itself
to the different microclimates of Trentino. Chardonnay was introduced
from Burgundy at the end of the 19th century and found in Trentino
Alto Adige’s hilly areas an ideal environment. The unique cultivation of
these vineyards with Pergola Trentina gives this wine a vast bouquet of
fragrances and aromas.

VINIFICATION
Vinified from estate grapes sustainably grown on the Alpine hills along the Adige river.
Vineyards have altitudes between 200 and 500 meters above sea level. Traditional
white wine vinification with a brief contact on the skin ensures the transfer of the
grape’s aromas and characteristics to the wine. Followed by a controlled fermentation
at low temperature oin stainless steel tank to preserve freshness.

CHARACTERISTICS
Colour: straw yellow.
Fragrance: elegant and fruity bouquet with hints of red and yellow apples, apricot,
white melon and citric fruits.
Flavour: dry, harmonious and well-structured with a balanced acidity.

PAIRINGS
Excellent as an aperitif, it also pairs with tomato-based appetizers, creamy soups,
risottos, creamy and mild cheeses like Brie or Fontina and shellfish.

MERLOT.

This red grape variety is famous for its unmistakable suppleness.
Exclusive estate production of the vineyards located in the most
suitable areas to the north of Arco. An elegant wine of great
character with pleasant wild-berries notes.

 
VINIFICATION
Vinified from grapes of our own production, grown in the vineyards north of lake
Garda. Traditional red vinification with maceration of the skins for a 6-7 day period,
temperature controlled fermentation at 68-82°F, and short refinement in oak
barrels for 6-8 months.
CHARACTERISTICS
Colour: Garnet red.
Fragrance: intense with a mixture of ripe fruits and a hint of oak.
Flavour: dry, complex and well-structured.
PAIRINGS
It pairs well with grilled beef, lamb, sweet & sour pork, grilled vegetables, mild
cheeses like Gouda, mushroom-based dishes and soups.

TEROLDEGO.

This indigenous red grape variety is cultivated only with
sustainable techniques in our vineyard plots in the Piana
Rotaliana, the heart of Trentino and where we are based, named
by famous Italian geographer Cesare Battisti “Europe’s most
beautiful garden under vine.”  Our group is famous as the first
producer of Teroldego.

VINIFICATION
Grapes are hand harvested. After soft pressing the wine is subjected to
fermentation with selected yeasts, for 7-10 days at 24 ° C, to preserve Teroldego’s
uniquely mineral, tannic and fruity character. Then, malolactic fermentation with
selected bacteria is performed. Finally, the wine matures in stainless steel for
6-to-8 months. A small portion – about 10% - of the wine is aged in large barrels
specifically to soften its edges and provide the right structure.

CHARACTERISTICS
Colour: garnet red.
Fragrance: intense bouquet featuring spices and ripe red fruits and a hint of
vanilla bean derived from the oak.
Flavour: dry and complex with elegant tannins.

PAIRINGS
It pairs well with roast beef, coq au vin, roasted game, charcuterie like speck and
salami, risotto, lasagne and mature cheeses like Manchego, Puzzone di Moena
and Grana.
