Over time, I’ve realized just how extensive and diverse my network has become. It seems that whenever there’s a conversation at family gatherings about a local business, I’m quick to chime in with, “Oh yes, I wrote about them!”—perhaps much to the annoyance of my family. Note to self: maybe hold back on announcing all my business connections. As my daughter’s high school graduation approaches, I’ve been planning her graduation party with a sense of confidence, knowing exactly who to call. While preparing this June issue, I continue to discover even more specialized services that are unique and deserving of recognition. I was particularly excited to write about a dog trainer and her impressive training philosophy. Pardon the excitement, but as I write this, we have not even hit the equinox yet, and I have already fired up the grill more times than I can count. That bodes well for the Summer of ’24. Here are some tips on optimizing wine as part of your backyard grillin’ and chillin’… Keep the rosés on the front porch. That’s a nice way of saying that the bulk of today’s perfectly proper dry pink wines are no match for the intensified and diverse flavors that come off the grill. Keep the rosé for calm aperitif contexts. Safety (and spritzes) first. In that same spirit of keeping the pre-meal festivities on the lighter side, I recommend NOT drinking wine while prepping and cooking. Instead, go cold and refreshing and low-impact with an Aperol or other spritz. And feel free to mix it up. Prosecco is the key to the spritz, not the Aperol. Try Prosecco + Campari + OJ. Or Prosecco + St Germain. Go big on the ice, and always finish with a splash of soda and some sort of garnish to make it pop. Go for the fruit (or earth), but don’t sweat the tannin. Zinfandel is an alltoo-common reflex for BBQ and grilling alike, but let’s remember that these cuisines do not always overlap. Real barbecue is. Long, slow and heavy on spices. Grilling is about char and fast cooking, and spans more proteins. I have found that the best all-purpose grill-friendly red wines are generous in fruit, but not necessarily dense with tannin. Instead of Zin, try a Syrah or Grenache-based red. Whether a varietal wine or a blend, these grapes deliver plenty of juicy fruit. Another direction to go: Rioja, the neverrough and slightly oxidized classic red of Spain, is a fit for anything on a spit or over coals. Among white wines, bolder is better. The only place for Pinot Grigio in backyard grilling is in marinade. For drinking, Sauvignon Blanc reliably delivers more flavor and zing. Ditto Austrian Gruner Veltliner. Also recommended: unoaked Chardonnay with chicken; Austrian Gruner Veltliner with grilled veggies; and Albariños with fish or shrimp. Worth repeating: CHILL THOSE REDS! Wine and the great outdoors are a tricky play. Never hesitate to keep bottles of red on ice. If wine gets too warm (white or red), the alcohol tends to stick out and distract. Their story, however began about 65 years ago, over 4,000 miles away, on the picturesque island of Ponza off the coast of Naples, Italy. Giuseppe’s mother, Maria, owned and operated a well-known beachfront family bistro on the island of Palmarola, near Ponza. The bistro was famous for its traditional island cuisine, attracting both locals and tourists. The DiScala family, including the fishermen and water taxi operators, were all involved in the business. When Giuseppe and Sylvia met in Ponza in 1962 and planned to marry, they decided to begin their life together in America with the dream of opening a restaurant and continuing the family’s culinary tradition. They opened the Concourse Restaurant in 1963 in the Bronx. In 1991, they established Peppino’s Ristorante in Katonah, carrying their culinary legacy to Westchester. Their son, Joe DiScala, has maintained these high standards since 2001. Peppino’s Ristorante, has become a cherished dining spot in Katonah. This family-run establishment, housed in the town’s historic landmark train station, offers a warm and inviting atmosphere reminiscent of old-style Italian hospitality. Westchester K-9 Dog Training (Wk9), led by owner and certified master trainer Stacy Hirsch, is ready to help. “Training your dog is not just about teaching sit and lie down,” said Stacy. “Technically, basic commands do not determine a dog’s behavior. It is the everyday living and teaching that does. We focus on teaching families how to build a great relationship with their dog and learn how to communicate properly, similar to bringing up a child.” Establishing respect, rules, boundaries, and routines allows a dog to learn best and keeps the household happy. Wk9’s programs allow their trainers to educate the owner, and teach the dog a solid foundation. We asked Stacy for some insights about training, and here’s what she shared. Tell us about training puppies. Puppies are like sponges and learn every moment they are with you. They will not automatically understand what you want without the right guidance and patience. Focusing on teaching how you want your dog to behave is the key to success. Bad behaviors can be prevented by enrolling in a program as soon as your pup comes home (before the bad habits begin). Without the right guidance, bad habits can creep up slowly and become much more challenging to break at older ages. How can dog owners socialize their pups? There are big misconceptions about what socializing a puppy means. It is not about meeting every person and dog you run into or going to doggie daycare. Taking your pup out in the world for exposure to people, dogs, and noises while training and teaching is how to socialize. Our training programs are geared towards socializing properly and not overwhelming the dog. What is the time frame for successful training? Results are not determined by a certain amount of time to train each day. Just like bringing up children, it is an everyday work in progress. Parenting/teaching is happening at every moment you are with your dog until the habits are completely set into their muscle memory. This usually takes many months of consistency. A slow, steady education spread over time is the only chance for lasting success. Family participation, learning, and reinforcement are the most important parts of raising the best-behaved dog. Wk9’s facility is home-based in Mahopac on a private two-acre property with a fenced-in yard for play, renovated with beautiful custom play areas, rooms and suites for the dogs. They are fully staffed seven days a week, and welcome visits and tours by appointment. Education for both the dog and the owner will always yield the best results.
