Learning about wine can seem daunting, what with countless grapes, regions and labels. Here are a few bitesize nuggets to tuck away. The skinny on skin. So-called “red” grapes vary in hue from deep pink to blackish purple; “white” grapes are essentially shades of green. But with rare exceptions, when cut open they appear to be the same mottled gray, and the juice itself is practically clear. It is via “skin contact” that fermenting wine gains its color, flavor and texture. The myriad of distinctions among finished wines begins with differences in the phenolic compounds present in grape skins. Wines & vines. Spain has the most acres of land under vine, followed by France and Italy; but Italy produces the most wine—19.3% of the world’s total (France makes 17.65% and Spain 13.82%). USA ranks fifth in vineyard acreage and fourth in wine production (8.67%). The American state with the largest number of bonded wineries is California with over 6,100. The next closest state is Washington (1,383), followed by Texas (949), Oregon (932), then New York (776). Every state a country? Speaking of states, our current (archaic) laws regarding alcohol stem directly from the Repeal of Prohibition in 1933(!), which effectively put states in charge of alcohol “control.” In turn, the differences in how every state licenses, regulates and taxes alcoholic beverages can be dramatic. Here in New York, retail licensees who sell wine and spirits can’t sell beer—or food; in Connecticut, retailers can sell all forms of alcohol; ditto New Jersey, where they can also sell food. Then there’s Pennsylvania…. Sulfites happen. As a byproduct of fermentation, sulfites occur naturally at some level in every wine, and for centuries winemakers have added sulfur dioxide (in varying amounts) to prevent oxidation during production. The rather imprecise “contains sulfites” phrase on every label is thanks to lobbyists for high-volume producers; when the standard for labeling was debated, mass-producers—who typically add more sulfur—argued that since allergic reactions can be triggered by any presence of sulfites, the warning label should be just those two words, not presented technically as parts-per-million. Oxygen is wine’s friend and foe. Oxidation during fermentation can cause wine to spoil. But once uncorked (or unscrewed), wine generally benefits from aeration. This is especially important for young red wines, as exposure to air helps soften the tannins (rough texture) anwd open up the fruitiness. A number of gadgets now exist, purportedly to accelerate aeration; but simply pouring the wine and swirling it in the glass create this effect as well, and many wine enthusiasts enjoy the way a strapping Cabernet or Brunello evolves in the glass. Then, in anticipation of putting away wine until the next session, re-close the bottle quickly and store it in the fridge, even if it’s red. The cold environment helps slow the oxidation process, and your wine should stay palatable for at least a few days. Edwards goes on to explain, “We want to have the community join us for creative workshops, yoga, meditation and more while surrounded by inspirational artwork. BY VIM WILKINSON EDITOR The Schoolhouse Theater, Westchester County’s oldest professional theater and a prominent arts institution, has announced its final show of the 2023 season following two successful performances earlier this year. This October, don’t miss the Westchester premiere of James Sheldon’s “3-Way Stop,” directed by Artistic Director Owen Thompson. Experience an evening of three one-act plays running from October 13 to October 29. The opening on Friday the 13th is fitting, as Sheldon’s intriguing world challenges conventional thinking. “Patterns of the Sky” introduces us to Franklin and Eliza, an ostensibly perfect couple with hidden secrets. “Cowboys and Indians” delves into a biblical sibling rivalry between brothers Michael and Mitch. Finally, “A Beautiful Day” explores life after the end of the world. “Each of these one-act plays deals with how far people are willing to go to fend off disillusionment with their lives,” said Sheldon, whose work has been produced in New York, London and elsewhere. “When we face the fact that life isn’t what it’s supposed to be, what are the lies we tell ourselves and the truths we hide from others?” The production features a high-powered cast, including Eric Bryant, a Yale Drama alumnus who has graced stages from Westport to California and is no stranger to the Schoolhouse. He received the Connecticut Critics Circle Award for “The Invisible Hand.” Natalia Cuevas, a classically trained actress, is known for her work in Shakespearean productions and her appearance on HBO’s “The Deuce.” P.J. Sosko, a familiar face from TV series like “The Equalizer” and “Reservation Dogs,” will soon appear as Hunter S. Thompson on Netflix’s “The Girls on the Bus.” Thompson is excited to lead alongside Producing Director Bram Lewis. Many people don’t know that Medicare Savings Programs (MSPs) exist to help low- and moderate-income Americans pay their Medicare costs, including prescription drugs. In 2023, New York State expanded eligibility to include about 300,000 more New Yorkers. MSPs are benefit programs that help people with limited income and resources pay some of their Medicare costs. For those who qualify, MSPs can help with out-of-pocket costs such as premiums, copays, coinsurance, and deductibles. The effort to alert New Yorkers is part of a three-month long educational campaign to spread the word to ensure potential beneficiaries know about this opportunity to save, which could be a lifeline. Many individuals may not be aware that 50% of working income is deducted when calculating household income. One of AARP’s national priorities is to preserve and strengthen Medicare. So, to make sure older New Yorkers know what’s available to them, AARP is also providing information about the MSPs to members through telephone town halls, email blasts, Facebook live presentations and a media campaign. AARP New York is sending 70,000 letters this fall to New York households with information about this benefit program, which can put up to $2,040 a year back into individuals’ pockets. The Medicare Savings Programs program will help Medicare recipients struggling to pay for their daily necessities. Costs are skyrocketing for food and housing these days. Nationally, MSP enrollment has historically been low, often because many aren’t aware of the program. New York is among at least 15 states and the District of Columbia that are increasing the income limits or eliminating asset requirements for the MSPs. When you sign up for an MSP, you will automatically be enrolled in Extra Help, a federal program that pays most of Medicare prescription drug (Part D) plan costs and can save you roughly $5,000 a year, or $425 a month. Since there’s no resource test for MSPs, many Medicare beneficiaries who don’t qualify for Medicaid can qualify for an MSP. There are two levels of benefits, according to the New York State Office for the Aging. Each has a different income eligibility limit: · A “Qualified Medicare Beneficiary” (QMB) pays for Medicare Part A premium for people who don’t have enough work history for premium-free Part A. QMBs also pay the Part B premium, deductibles and coinsurances. Medicaid recipients who qualify for QMB cannot be charged Medicare copays. · A “Qualifying Individual” (QI) pays Medicare Part B’s premium. So, remember, this is not an insurance plan. Your current plan and health care providers won’t change. You will simply receive help to pay for some of your Medicare expenses. How do you tailor your chiropractic care plans to meet the unique needs and goals of your patients, athletes and nonathletes? As a chiropractic patient at my office, your first visit always includes a full history and exam. With this, I am able to develop a comprehensive treatment plan which may or may not include myofascial release, chiropractic adjusting, and rehabilitation exercises as well as various passive modalities such as electrical stimulation or ultrasound. Sport performance and personal training clients are assessed, and a full program will be developed with your past and current injuries in mind as well as your goals for training. Can you elaborate on the importance of early intervention and rehabilitation exercises for individuals dealing with injuries? The sooner that you address pain and dysfunction, the more likely you are to have a good result from treatment. Injuries and dysfunction have a tendency to build off one another. An example of this may be a lower back injury which forces you to alter your gait which then in turn may put strain on your knees or ankles. Your rehab exercises would be a crucial part of your treatment and in addressing the root cause of pain and dysfunction. What advice would you give to someone who is considering chiropractic care for the first time? I would tell people to try it out for themselves before coming to a conclusion. The chiropractic profession has changed a lot in recent years, and you may be surprised with the level of care that you will receive. Treatments are gentle and I even tell my patients that adjustments are not a mandatory part of treatment. If you are uncomfortable with being adjusted, treatment without adjusting can be just as effective. Adhering to the fundamental principles of chiropractic care, Dr. Turchioe’s primary objective is to address the patient as a whole rather than merely treating symptoms. His aim is not only to alleviate pain but also to enhance movement and body mechanics while educating patients on how to lead pain-free, healthy lives. Directions: Preheat the oven to 375 F. Grease a 13” x 9” baking dish with garlic olive oil. Place the cut up butternut squash in a large sauce pot of hot water and bring to a simmer. Simmer for approximately 15 minutes or until the squash is fork tender. Drain and reserve. Bring a large stock pot of salted water to a full boil. Add the pasta and cook based on the package instructions to al dente. Meanwhile, in a large stock pot, heat the garlic olive oil over medium heat. Add the shallot and sauté for about 2 minutes until the shallot just begins to turn golden. Add the flour into the olive oil and whisk to blend thoroughly for about one minute, stirring constantly. Slowly pour the milk into the flour roux, whisking constantly. Add the cream and continue whisking until thickened. Take 1 cup of the sauce from the pot and add it to a blender or food processor with the butternut squash. Process until smooth. Add the butternut squash mixture back into the pot with the rest of the sauce. And whisk to combine. Add all of the cheese, reserving 1 cup of gruyere cheese. Stir to melt and combine. Taste for seasoning and adjust with truffle salt and pepper. Add the truffle oil, and the pasta. Mix well and pour into the prepared baking dish.
