Summer Recipes Let your summer sizzle this season with some delicious
recipes. Our friends at Phat Olive have shared a recipe for

a tasty appetizer and a delicious dinner recipe blended
with some great oils and balsamics.

Crab Stu ed Mushrooms

Crab stu ed mushrooms are the ultimate appetizer for any occasion. Super delicious, you will love
how fast and simple they are to make!

Ingredients:

• 20-25 Baby Bella Mushrooms

• 2 tbsp of Spicy Calabrian Pesto Infused Olive Oil

• Salt to taste

For Stu ing:

• 8 oz. Cream Cheese, room temperature • 1/2 tsp Ground Black Pepper

• 4 oz. Crab Meat, chopped finely • 1/4 tsp Salt

• 1 tbsp Phat Olive Basil Olive Oil • 1/4 cup Breadcrumbs

• 4 Garlic Cloves, minced • 2 tbsp Grated Parmesan Cheese

• 1/2 tsp Paprika

Directions:

Preheat oven to 400°F. Line a baking sheet with parchment paper or aluminum foil. Remove stems from mushrooms and place mushroom caps, open end

up on lined baking sheet. Brush Pesto olive oil on all your mushrooms and season with salt. Finely chop your mushroom stems and set aside to mix into

stu ing. In a large mixing bowl, mix cream cheese, crab meat, garlic, paprika, ground black pepper, mushroom stems, Basil olive oil, salt, and breadcrumbs.

Mix well making sure that there are no lumps in the cream cheese. Stu mushroom caps with filling, then sprinkle parmesan cheese on top of stu ed

mushrooms. Bake uncovered until mushrooms are very tender and filling is nicely browned. (approx. 30 min). Serve hot and top with chopped parsley.

Red Apple Balsamic Glazed Pork Chop

A delicious new way to flavor up your pork chop. Add a tantalizing red balsamic glaze to
your pork chop and watch the smiles appear!

Ingredients: For Pork Chops:
For Balsamic Glaze: • 4 Boneless Center-Cut Pork Loin Chop
• 1/2 cup Phat Olive Red Apple Balsamic • 1 tbsp Phat Olive EVOO
• 1/3 cup Brown Sugar • 1/4 tsp Sea Salt
• 1/3 cup Apple Cider or Apple Juice • 1/4 tsp Ground Pepper
• 2 tbsp Dijon Mustard
• 1 tbsp Soy Sauce
• Pinch Cayenne Pepper

Directions: on glaze mixture; cook over medium heat until the center of each pork chop
Combine all glaze ingredients in a medium bowl; whisk thoroughly and set registers 140 degrees, 5 to 8 minutes. Remove skillet from heat; transfer pork

Some even call it Windex blue. We ew from Westchester Air-
port, which is only a 30-minute drive from our home in Yor-
ktown. We ew to Fort Lauderdale and took a 1.5 hour con-
necting ight from there to Georgetown. From there it was a
30-minute drive to the rental home in Little Exuma. e four
of us stayed for a week. It was so peaceful and beautiful. e
house was located in a private cove overlooking the ocean and
two small islands in the distance that we could kayak to. I could
write pages about Exuma and the endless number of activities.
We went to see the swimming pigs; what a sight to see. e
sand bars are something you must see and visit for yourself. We
saw dolphins passing by right out the back deck of the house.

forget the beautiful week we had in Exuma.

of Class 1 rapids o er a great option for young families to enjoy the
river ride. Tubers can choose individual tubes and families can stay
together with the “stay together strap” that keeps tubes together if
needed. ere are also kayaks, rafts and canoes for rental.

A highlight of the tubing trip down the Delaware River is the
famous River Hot Dog Man pit stop. About halfway into the trip
down the river, tubers will come to the oating river barge which
o ers a quick lunch (hot dogs, cheeseburgers, chicken sandwiches
and more). Picnic tables are set in the river and tubers get to sit with
their feet dipped in the cool water as they enjoy the free meal and
the view around them. e meal comes with the tubing trip package.

Tickets need to be purchased in advance. Season starts July 1
