1 B12 Vegan Burger (VGN005)
1 Vegan Brioche Burger Bun (BRE077)
30g Vegan Smoked Gouda (VGN091)

METHOD
1. Dry pan fry the B12 Burger for 5 minutes on each side until
piping hot
2. While the burger is cooking, toast the Vegan Brioche Bun
3. Smother the bottom half of the bun with the Vegenaise
4. Place the Vegan Smoked Gouda on the B12 Burger for the final
minute of cooking so it starts to melt
5. Place the lettuce and tomato on the bottom half of the bun and
top with the burger and smoked gouda
6. Top with the other half of the burger bun and serve with fries
or salad

75g Jackfruit (FRU056) 1. Defrost the lotus style buns, shred the jackfruit and mix
30g BBQ Sauce with the BBQ sauce
1/4 Red Onion, thinly sliced 2. Toss together the red onion, radish, carrot and coriander
1 Radish, thinly sliced in a bowl to prepare the asian style slaw
1/8 Carrot, thinly sliced 3. Reheat the lotus buns and jackfruit seperately, until

SESAME INGREDIENTS DRESSING
ROLLED 250g of Merchant Gourmet 150ml soy sauce (SCE017)
TOFU WITH mixed grains (CER031) Juice and zest of 1
PONZU 200g Tofu (VGN017) mandarin
DRESSING 1 tbsp sesame Juice of 1 lemon (JUI041)
seeds (SEE020) 1 tbsp sesame oil (OIL012)
4 spring onions 1 tbsp sesame seeds
Splash of sesame (SEE020)
oil (OIL012) 1 tsp ginger puree
(PUR030)
METHOD
1. Make the dressing by mixing together the soy sauce,
ginger, sesame oil, lemon and mandarin juice together
in a saucepan, bring to the boil
2. Simmer for 5 minutes, take off the heat and add the
mandarin zest
3. Heat up the splash of sesame oil, add three sliced
spring onions and once softened add the Merchant
Gourmet rice pouch until warmed through. Serve
between two plates.
4. Roll the tofu in sesame seeds, cut into four slices and
arrange between the two plates. To serve drizzle with
Ponzu dressing and sprinkle over the remaining spring
onion

Chestnut Puree (NUP020)
75g roasted red pepper pieces (PEP028)
2 medium sized garlic cloves, peeled &
crushed
2 tbsp tahini
3 tbsp extra virgin olive oil (EVO203)
2 tbsp lemon juice (JUI041)
METHOD salt
Put all the ingredients together in a food processor. Blend for 90 seconds or until it is
completely smooth. Season to taste with salt.

250g pounch of Merchant Gourmet® Simple
Cooked Super Seed Mix (SEE076)
2 tbsp of peanut butter
2 tbsp of cocoa nibs
2 de-cored dates
pinch of salt
200g unsalted peanuts
METHOD
Place all the ingredients (except the peanuts) in a blender and blitz until a dough is
formed. Roll into balls, about 2 tbsp at a time.
Seperately, in a blender blitz the peanuts until fine, then roll the balls in the crushed
peanuts. Store in the fridge and have on hand as a high protein snack
