What does it take to create an Extraordinary Dinner?
For renowned chef Daniel Boulud, it’s all about sharing

Iím learning all the time and Iím sharing all the time. Thatís
what I think I enjoy the most. To learn, to share, to keep
giving.î From some people, chef or otherwise, this sort of
comment sounds like a carefully rehearsed soundbite. Daniel
Boulud, however, practises what he preaches. The arranged time for
our interview at Bar Boulud, his restaurant at Londonís Mandarin
Oriental Hotel, slips past because Daniel has returned to the

suitcase and in no time at all youíll have hit upon an exhibit of
trompe líoeil still lifes by Dutch Master-parodist Richard Kuiper
or a library of raunchy conceptual art tomes stacked against
matt-black walls. Youíll be kicking back on designer loungers in
landscaped gardens in the shadow of the Westerkerk churchís

them meander, making a visit seem more like an expedition. Yet
losing yourself here is pure joy.
A member of the Preferred Hotels group, the Pulitzer recently
reopened after top-to-toe renovations ñ the most extensive in its
history ñ and thereís not a hotel in Amsterdam that can compete
with its sense of place. In line with its enviable location among
the gables lining the canals of Prinsengracht and Keizersgracht, it
recalls the cityís 17th-century heyday in original brick, parquet
and beams. Yet it nods to the cityís current renaissance with sinuous
designer furnishings upholstered in tulip yellows and purples.
From the plush lobby to the verdant gardens, itís hard to imagine
being anywhere but canalside Amsterdam, in the crux of the
country that brought you Vermeer, Bosch and Marcel Wanders.
Jacu Strauss, a young alumnus of Tom Dixon and creative
director for the hotelís renovation, has made the most of every
corner of the property with cosy niches that are nigh on
impossible to resist. In a garden room engulfed in iron-framed
windows, heís lined up marble tables with emerald-green chairs,
backed by a marble breakfast bar trimmed in brass. In a long,
narrow room facing the adjacent terraces, heís parked a banquet
table amid wall hangings of vintage copperware. And in the
hotelís dark heart is that slinky cocktail lounge, its velvet chairs
the colour of amethysts and its bar faceted like a jewel. You
