The term “Peranakan” means “locally born” in the Malay language,
and refers to the descendants of early Chinese immigrants who
intermarried with the locals in the Malay archipelago, including
Singapore. The Peranakans have a hybrid culinary tradition that
combines techniques and ingredients from Chinese, Malay and European
cooking. It has a long and sophisticated history, with recipes closely
guarded by families and only passed down from the matriarch to her
female descendants.
For this special occasion, Singapore Airlines is proud to showcase
Ms Shermay Lee’s family recipes, which she inherited from her
grandmother, Mrs Lee Chin Koon, a renowned and prolific doyenne of
Peranakan cuisine in her time. All of the recipes featured have been in
the family for generations and are more than half a century old.
Customers can look forward to a journey of tantalising flavours that
begins on the ground. At the SilverKris Lounges at Singapore Changi
Airport, relish Peranakan favourites such as Nonya rojak, itek tim and
Nonya fried Hokkien mee.
Once onboard, Suites, First Class and Business Class customers can

In 1715 the Spanish painter Velasquez

Jean Martell decided to set up in business
making cognac. It was a relatively new version
of brandy, which had only been around a
few decades, but it was proving popular and
Martell thought it might be a good business
to get into. He was right: 300 years later the
cognac house of Martell remains the oldest of
the major cognac companies, and business is
still booming.
Even today, Cognac remains a small town
of only 20,000 people, owing its fame to
quirks of history and geography. I’d arrived
in advance of their anniversary celebrations
to visit Martell and some of the other famous
distilleries that are based here and in the
nearby town of Jarnac. Signs point to names
like Martell, Hennessy, Courvoisier and Rémy
Martin in what is a cognac lover’s paradise.
