Ingredients
• 250g enjoy local batch loaf bread triangles Keelings Cranberries 250g
• 200g packet of Philadelphia crème cheese £1.89
• 3 -4 tbsp. sugar (optional or to taste)
• 8 eggs, slightly beaten
• 350ml whole milk • 150ml double cream
• 120ml  maple syrup • 2 tsp. vanilla extract
• 1 tsp. ground cinnamon • Powdered sugar

Method
1. Place the bread triangles in a buttered

13 x 9-inch baking dish.
2. In a bowl beat the softened cream
cheese with sugar at medium speed with

an electric mixer until smooth.
3. Add in eggs one at a time mixing

well after each addition.
4. Add in milk, double cream, maple syrup,
cinnamon and vanilla. Beat until well combined.
5. Pour the cream cheese mixture over the bread
in the baking dish, using a fork or spoon gently
lift the bread so that it is coated evenly with the

egg mixture.
6. Cover with plastic wrap and refrigerate

for 8-24 hours.
7. Next morning set oven to 375°F/190°C
8. Remove the dish from the fridge and let sit
out at room temperature for 30 minutes.
9. Bake uncovered for about 45-50 minutes
or until set and a golden brown colour.

10. Sprinkle with powdered sugar and
serve with more maple syrup.
Tip: Serve with some delicious
homemade cranberry jam.

Scrumptious Starters

LOADED CHEESY BAKED
POTATO SOUP

Ingredients
• 1.25L water
• 1Kg potatoes, peeled and chopped
• 1 onion, peeled and chopped
• 300g carrots, peeled and chopped
• 1 tsp. garlic powder • 2 tsp. onion powder
• 1 chicken stock cube • Streaky bacon pieces
• Salt & chopped chives (for flavour)

Method
Prep Time: 20 min
Cook Time: 20 min
1. In a large pot, bring the water to a boil.
2. Add in the chopped potatoes, carrots, and onions.
3. Add in the garlic powder, onion powder, salt,
and chicken stock cube.
4. Boil all together for 15 minutes, or until the
vegetables are soft.
5. Pour half of the soup into the blender and

liquidise.
6. Pour the liquid soup back into the pot with the

chunky soup. Stir together.
7. Adjust salt and chopped chives to taste.
8. Serve topped with chopped chives and cooked

pieces of streaky bacon
For a vegetarian option of this recipe replace the chicken

stock with vegetable stock and do not add bacon.

SALMON
FILO PARCELS

Serves: 4 
Ingredients
• 4 x 100g Keohane’s Salmon fillets
• 8 sheets filo pastry
• 90g melted butter
• Salt & ground black pepper to taste
• 4 tablespoons Dijon mustard

Method
Prep: 25min  
Cook: 20min  
1. Preheat oven to 190°C / Gas 5.
2. Take 2 sheets of filo pastry,
placing one on top of the other and
lightly brush with melted butter,
covering the one side completely.
3. Place a portion of salmon (100g)
on the edge (nearest you) of the filo
pastry. Sprinkle with salt and pepper
to taste. Coat the portion of salmon
with 1 tablespoon of Dijon mustard.
4. Fold the filo pastry, nearest you,
over the salmon and make one
complete wrap. Take the sides of the
dough and fold them towards the
centre and continue rolling up the
dough. Brush all sides with butter,
covering completely and place on
a baking tray. Repeat steps for
remaining portions of salmon.
5. Bake for 20 minutes or until filo
pastry is golden brown.

SALTED CARAMEL
CHEESECAKE

Ingredients
• 300g ginger biscuits

• 125g butter
• 200g condensed milk
• 70g unsalted butter

(for the caramel)
• 50g light muscovado sugar

• ¼ tsp sea salt
• 300ml whipping cream

• 300g Crème Cheese
Method

1. For the base, whizz the biscuits
into crumbs in a food processor.
Transfer to a bowl, add the melted
butter and mix. Press the buttered

crumbs into a 22cm diameter
loose-bottomed cake tin. Chill in

the refrigerator until firm.
2. To make the filling, whip the
cream until firm but not too stiff.
Add the crème cheese and mix.
Spread the mixture evenly over
the caramel layer and chill in the

refrigerator.
3. For the salted caramel, heat the
condensed milk, butter and sugar
in a small saucepan over a medium
heat, stirring continuously until
the butter melts. Simmer for five
minutes over a low heat, stirring
continuously, until thick and a light
caramel colour. Stir in the salt and

mix well.
4. Once the caramel is cooler,
drizzle it over the cheesecake.

Drizzle melted chocolate
also if desired.

SAUSAGE, APRICOT
& CELERY STUFFING

Ingredients
• 1 onion, peeled and finely chopped

• 2 sticks celery, finely chopped
• 50g chopped dried apricots
• 50g butter

• 1 teaspoon chopped rosemary
• 500g sausage meat
• 75g breadcrumbs

Method:
1. Fry the onion and celery in the butter until

soft and golden.
2. Cool. Mix in the remaining ingredients.
3. Pack into a baking dish and bake for 30
minutes or alternatively roll into balls and
cook round the turkey for the last 20 minutes.

TRADITIONAL GRAVY

Ingredients
• Add 1 carrot, 2 onions and 1 stick of
celery to bottom of pan when you cook

your turkey
• 25g plain flour
• 750ml hot chicken stock, made

with 2 cubes
Method:

1. Place vegetables and cooking juices
from turkey in a saucepan.

2. Blend in the flour and then stir
in the hot stock. Simmer for 10
minutes then strain through
a sieve, pushing through some
of the vegetables to help
thicken the sauce.
3. Check seasoning and serve.

PARSNIP GRATIN Christmas with Paula McIntyre

Ingredients BRUSSELS SPROUTS WITH
• 1kg parsnips BACON & CHESTNUTS
• 300ml double cream • 100ml milk
• Salt and pepper to taste Ingredients
• 1 small onion, peeled and sliced thinly • 750g sprouts, trimmed and cut
• ¼ teaspoon nutmeg
• 100g grated cheddar in half through the root
• 4 rashers streaky bacon, chopped
Method:
1. Set oven to 200°C and • 1 tablespoon vegetable oil

4. Heat a thumb nail depth of oil in a pan
until a piece of bread added sizzles.
