I hope everyone’s Holidays started with a wonderful Thanksgiving. The club
served over 300 people and Chef David did an amazing job on all the
delicious food. Even his carry-out dinners were a huge success.

"Seasonal Foods
in December"

EXECUTIVE CHEF
DAVID HOFFMAN

Grocery shopping is already a pretty time consuming task, but not knowing what to buy when you get
there can be overwhelming and pricey. However, purchasing seasonal foods is a healthy and cost
effective way to approach food shopping. Grocery stores tend to stock up on these items in bulk
because they are plentiful, making them less expensive for you—especially when they go on sale

 Celeriac Soup

Ingredients Method

• 50g butter 1. Melt the butter in a large, heavy-based pot
• 1 celeriac, peeled and cubed
• 1 potato, peeled and cubed over a medium-low heat. Add the celeriac,
• 1 leek, trimmed, washed and roughly
sliced leek, potato, garlic and onion, season
• 1 onion, peeled and roughly chopped
• 1 garlic clove, sliced generously, and gently sweat the vegetables
• 6 cups chicken  stock, chicken,
vegetable or made from the bones of until they're all starting to soften (this will
your Christmas bird
• 2 cups heavy cream take about 10 minutes).

2. Add the stock, bring the soup up to a boil,

turn down the heat and simmer for about 20

minutes or until the celeriac is completely

tender. Liquidize until smooth, return to the

pan and reheat over a medium flame. Just

before serving, check the soup for seasoning

and serve. 6
