Editor’s Desk Dear Readers,
Embracing the new normal is the theme that emerged as we are inching toward
the end of 2021. With the Covid-19 pandemic set to become an endemic which
permeates our daily life for the foreseeable future, the Faculty of Hotel and
Tourism Management UiTM has also adapted to the changing situation to
accommodate the new norm in education.
The online presence has supplanted many face to face activities through webinar
series and online workshops. The adaptation that has slowly penetrated our
education philosophy has slowly reformed the approach taken in teaching and
learning, which necessitated the formation of a new mindset to navigate this
challenging time successfully.
The present situation in the higher education landscape poses new challenges to
both the students and lecturers. However, with perseverance and the right
mindset, I believe that we can usher higher education to a new height.

WEBINARS AND PROGRAMS
21 HOURS WITH THE INDUSTRY
PROGRAM
In accordance with the Government's goal of developing a
competent workforce among high institution graduates, the
"21 Hours with The Industry" program was created in hope to
assist and prepare final-year students for early exposure to
the tourism and hospitality industry. This program was
developed in collaboration with the Faculty of Hotel and
Tourism Management's (FPHP) Deputy Dean of Research and
Industry Linkages Office (PJI), Academic Affairs (HEA), and
Student Affairs (HEP) divisions.

Given the importance of symbiotic relationship between
university and industry, a total of seven (7) "21 Hours with
the Industry" sessions have been successfully implemented
for the March – August 2021 edition. Each session was
conducted for three (3) hours and featured one or two
speakers from the industry and alumni who shared their
knowledge, experience, and tips on current issues,
opportunities, and career development in the industry.
Additionally, this program encourages industry players and
alumni to collaborate with UiTM students to develop
graduates' marketability in a holistic and industry-relevant
way.
WEBINAR ON THE GLAMOROUS AND
THE DARK SIDE OF THE CHEF’S WORLD
On June 25, 2021, FHTM UiTM Puncak Alam organized the program
21 Hours with the Industry: The Glamorous and The Dark side of The
Chef’s World. The talk was open to the final semester FHTM Puncak
Alam undergraduate students. During the event, the speaker shared
opinions, thoughts and experiences of overcoming all the challenges
along the way of chef journey. Questions from the audiences were
brought up for more explanation on certain issues.
Dr Ahmad Fitri Amir was on hand to open the event and Mr Firdaus
Hanan was invited to be the moderator for the talk. The speaker for
the event was Chef Rene Johari from Double Tree by Hilton Dubai-
Business Bay and Chef Johnson Wong from gēn 根, The Prestige
Hotel.
During the webinar, event participants had the opportunity to ask any issues about the topics presented by
the speaker. Topics included: the era of Covid 19, the philosophy of being chef, kitchen management and
future expectation on the food industry. The sessions lasted 120 minutes.
At the beginning of the session, the moderator started the question by asking about what makes both
speakers inspired to work as chefs. Then, the following question is all about the obstacles and the good part
of being a chef in a hotel and restaurant. All questions related to barriers and solutions on the food industry
explained at the end of the sessions to the audiences.
3 IN 1 CONFERENCE
The Faculty of Hotel and Tourism Management is honored to
participate in the 3 in 1 visiting professor and professional
program hosted by Universitas Brawijaya, Indonesia from
September 6th to 10th, 2021.
Notably, during the five-day program, participants had the
opportunity to learn and gain exposure from Dr Faiz Izwan Anuar
on Online Lecture, Assoc Prof Dr Hassnah Wee on Workshop
Event Management, Assoc Prof Dr Mohd Hafiz Hanafiah on
Writing Journal Articles in the Field of Tourism, Prof Dr Norain
Othman in Seminar Nasional Resilient Tourism for the Future:
Covid19 Policy Response & Recovery Strategy along with other
presenters including professionals from Indonesian academic,
corporate, and public agencies as well as Dr. Ahmad Fitri Amin
Research Skills Online Training in Tourism.

Additionally, the program also includes inbound and outbound mobility initiatives for staff and students as
part of the UiTM2025 campaign's initiatives. We would like to express our gratitude to all panelists who
contributed to the program's success and hope that it further establishes UiTM's Faculty of Hotel and
Tourism Management as a renowned institution in the hospitality and tourism fields.
EKSPO MAYA SELANGKAH KE UiTM (ESKU) 2021
Universiti Teknologi MARA (UiTM) organized Ekspo Maya Selangkah
ke UiTM (EKSU) 2021 virtually through the UiTM YouTube Channel as
a medium for two days (13th and 14th June 2021). According to the
Student Admission Division UiTM, Ekspo Selangkah Ke UiTM is an
event organized by the University since 14 years in 2008. It is a
platform to promote the admission of Sijil Pelajaran Malaysia (SPM),
Sijil Tinggi Pelajaran Malaysia (STPM) and Matriculation graduates
to the tertiary level in making the right and appropriate choice
based on the results obtained.
ESKU 2021 was officiated by the Deputy Vice Chancellor of
Academic and International UiTM who performs the function of Vice
Chancellor, Professor Ts. Dr. Roziah Mohd. Janor. According to BPP
UiTM, UiTM offers more than 498 academic programs at UiTM
campuses nationwide.

A total of 50 representatives including lecturers and
administration staffs from Faculty of Hotel and Management
(FHTM) were involved in making the ESKU 2021 success.
They are divided into four departments according to the
program offered by FHTM which are Department of Hotel
Management, Department of Tourism Management,
Department of Food Service Management and Department of
Culinary Art.
The objectives of the event are audience may obtain clear
information on opportunities to further their studies at UiTM
including programs offered according to the suitability of a
student's academic qualifications, obtain advice on the
selection of study programs from representatives of faculty
and make a comparison between one programs with another
program.

UiTM VIRTUAL POSTGRADUATE
OPEN-DAY
The Largest Virtual Postgraduate Education Fair 2021 was organized by
Institute of Graduate Studies (IPSis) UiTM on 21st – 22nd August 2021 and
28th – 29th August 2021 virtually through interactive platform
https://virtual.uitm.edu.my to communicate with the potential students.
The event highlights are getting all queries answered by interacting via
online with representatives of each faculty.
On 29th August 2021, representative and Head Centre of Postgraduate
Studies FHTM, Dr. Muhammad Izzat Zulkifly have been opportunity to shared
the journey nominated as ranked 2nd university in Malaysia by QS World
University Ranking by Subject 2021. The programs offered by FHTM are
Master in Hospitality Management (Coursework and Research), Master in
Tourism Management (Coursework and Research), Master in Food Service
Management (Coursework and Research), Master in Gastronomy
(Coursework and Research), Doctor of Philosophy in Hotel and Tourism
Management.

FHTM RESEARCH AND INNOVATION
WEBINAR SERIES (FRIWS) 2021
The Office of Research and Industry Linkages, Faculty of Hotel and Tourism
Management, UiTM Puncak Alam Campus was organized virtual talk
sessions FHTM Research and Innovation Webinar Series (FRIWS) 2021. The
goal of this webinar is to bring together bright minds to give talks and tips
that are idea-focused, and on a range of subjects related to conducting
research and inculcating innovation, to foster learning, inspiration, and
wonder-and provoke conversations.
A total of 8 series of webinars was conducted to ensure that all aspects
related to research and innovation can be touched to enhance the mastery
among audiences, faculty members and students with this matter. The
relevant topics are covered by expert speakers from UiTM, Taylors’
University and University of South Florida.

The first webinar’s topic was ‘Re-thinking the role of intellectual
property’ by Dr. Farizah Mohamed Isa. Continue with next series on ‘From
innovation to commercialisation’ by Associate Professor Ir. Ts. Dr. Rozita
Jailani, ‘Starting a chapter in book project’ by Professor Dr. Norzaidi
Mohd Daud, ‘Converting FYP to research article’ by Dr. Abdul Rahim
Ridzuan.
The session continues with ‘Publishing in high-impact journal’ by
Associate Professor Dr. Seyyed Mostafa Rasoolimanesh (from Taylors’
University), ‘Corresponding author – What are my responsibilities?’ by
Associate Professor Dr. Erne Suzila Kassim, ‘Researcher visibility – Tips
and tricks by Dr. Yong Soon Kong and lastly ‘Collaboration in research
and publication – Why and how?’ by Dr. Faizan Ali (from University of
South Florida).
Aims of the webinar series are to increase number of other IPRs, number
of published by UiTM Press and other publishers, number of indexed
publication (Scopus/WoS/ERA/MyCite), number of principal investigators
(PI) for research grants: industrial, international and national funded and
number of indexed joint publication with national collaborators and
industry collaborators.
FPHP WEBINAR SERIES: POTENTIAL AND CHALLENGES OF WORKING ABROAD
AS EXECUTIVE CHEF AND COMMIS IN INTERNATIONAL HOTEL CHAIN
On July 9, 2021, FHTM UiTM Puncak Alam hosted a webinar series with
chefs from the industry, with the theme being the Potential and
Challenges of Working Abroad as an Executive Chef and Commis in an
International Hotel Chain. The seminar was available to students from
various hotel and tourism institutions as well as industry professionals.
Chef Kasdi Dahari (Executive Chef) and Chef Nur Aina (Demi Chef)
from Hilton Ras Al Khaimah Beach Resort, UAE, spoke at the occasion.
At the start of the webinar, both presenters discussed the period of
Covid 19 in the UAE, as well as what drove them to work as chefs. The
subsequent questions concerned the roles of an executive chef and a
commis in a multinational hotel chain.
A topic regarding self-principle and racism while working overseas was
raised by the audience during the Q&A session with participants. Both
speakers share a wealth of information and opinions with the audience.

From the perspective of students, both presenters discussed what
students should be prepared for in terms of knowledge, skill, and
attitude beginning with their studies and continuing until they enter the
business. The speakers also encouraged the students to enter the
competition and establish a network with professional chefs in order to
have the opportunity to work overseas.
On the other hand, certain points emerge from the speakers that would
provide some ideas to the lecturer when it comes to motivating and
building up students' passion to participate in any kind of competition
and allowing students to feel the pressure in the competition and
reflect on the real working style in the industry.
On behalf of the faculty, we are very pleased with both chefs from the
industry's desire to share and inspire students and others out there to
work overseas. It is intended that the collaboration between faculty and
industry will continue to produce excellent graduates with the capacity
to work in the sector, whether inside or outside of the nation.

STUDENTS ACTIVITIES
PROGRAM PEMANTAPAN DESTINI SISWA 2021
(SEMESTER MARCH/AUGUST 2021)
“Welcome to FPHP” greeting to the new addition of students to the faculty
of hotel and tourism management. As before the pandemic, it is customary
to welcome the new student with a program that introduces UiTM, the
faculty and student service information. The program was held on 31st
March 2021, organize together by the Majlis Perwakilan Pelajar and
Sekretariat Mahasiswa Fakulti in the effort to ensure the new student are
well informed on student services both academic and student affairs. It
also introduces the four (4) pillars of the faculty and its members, namely;
hotel management, culinary arts, food service management and tourism
management. Students are also exposed to the activity conducted by the
internal club such as the School of Hotel and Catering Management
(SHOCAM), bakes club, food service society and MARA youth tourism
association (MYTA). The online program held via Cisco Webex managed to
gather 196 participants was a success in informing our new family
members that they have made the right decision in joining FPHP family.

YOUNG LEADERS’ DEVELOPMENT WEEK

HOLISTIC HEALTH WEEK (17 June - 1 July 2021)
With the theme of addressing faculty students' mental stability holistically,
the Deputy Dean of the Student Affairs Office (HEP) Dr Azdel Abdul Aziz
launched a "Holistic Health Week" that focuses on raising awareness of
mental health and the best practises for sharing and coping with issues
among students. It is widely accepted that the new normal of Covid-19 and
the pandemic environment have increased students' stress levels, therefore
interfering with their focus on online classes and life balance. As a result, the
faculty's student representative (MPP) and the student secretariat (SMF), in
collaboration with other faculty societies, held several programs from 17 June
to 1 July 2021. Programs such as webinars on stress management, a virtual
run competition, online bingo, FPHP Got Talent 2.0, and a pubg e-games
tournament were held. The event was concluded with a Yassin recital and
words of wisdom from Dean, Professor Dr. Haji Salehuddin Mohd Zahari . Over
500 students from the faculty participated in total in the programs. Through
these positive initiatives, it is hoped that student mental health, life balance
and stress levels can be addressed. #fphpcare

HIGHLIGHTS
MOU SIGNING CEREMONY
Faculty of Hotel and Tourism Management (FHTM), Universiti Teknologi
MARA (UiTM) hosted a Memorandum of Understanding between the
faculty and six international universities institutions of higher learning
and five industry partners. The ceremony was held on Friday,
September 17, 2021 at 10.00 AM via Zoom platform.
It was officiated by UiTM’s Vice Chancellor, Professor Ts. Dr. Hajah
Roziah Mohd Janor. Participated universities and institutions of higher
learning at the ceremony were Sekolah Tinggi Pariwisata Bogor
(Indonesia), Akademi Pariwisata Indonesia (Indonesia), University of
Rijeka (Croatia), Aletheia University (Taiwan), University of Baguio
(Philippines) and Taishan University (China).
Meanwhile, industry partners presented at the ceremony were Hotel
Adya, Asia Mex Concepts Sdn. Bhd., La Crista Hotel, Brahim’s SATS
Food Services Sdn. Bhd., and Tateyama Food Industries Sdn. Bhd.

Dean of the FHTM, Professor Dr. Haji Mohd Salehuddin Mohd Zahari stated that this strategic cooperation will
allow much larger activities of knowledge, expertise, idea and vision exchange between students and
academicians as well as opportunity for student internship. It is hoped that the MoU would not only help to
enhance the faculty and UiTM’s reputation, but would also expand the marketability of faculty graduates in
the future.
