EDITOR’S DESK Eid Mubarak 2021!

We are happy to share with you all the exciting programs that have taken 4
place in May 2021. We have worked to create a better community
engagement and learning experience for the development of the Faculty
and students.

Following Ramadan 1442h in May 2021, the focus of our CSR program is to
provide aid and share the joy with others. As a result, we held two
programs where we distributed food to orphans and UiTM employees,
hoping to give a genuinely impactful path to establish the Faculty's
reputation.

In addition, we organized two curriculum review programs in which we
invited expert panels to share their perspectives and ideas on how to
improve the student experience, engagement, and learning outcomes. We
hope this will be a stepping stone as we will continue to take various
initiatives to be more proactive in introducing visionary programs in the
future.

SHARING HAPPINESS

PROGRAM KASIH RAMADAN 1442H

While Muslims in Malaysia celebrate the holy month of Ramadan by
gathering with family and friends over delectable meals to break the
fast at sunset, some members of society are unable to partake in the
joys of Ramadan. Ramadan is a time to give to those in need and
reflect on the plight of underprivileged living in welfare homes and
orphanages.

On 4th of May 2021, 22 Ramadan 1442H, the Tourism Management
Department, Faculty of Hotel and Tourism Management (FPHP) UiTM
Puncak Alam, in collaboration with the MARA Youth Tourism
Association (MYTA) and QSR Brands (M) Holdings Bhd, organized a
corporate social responsibility (CSR) event via "Program Kasih
Ramadhan 1442H” initiative.

The program's goal is to share the excitement of “we care” to 50
children from Pertubuhan Amal Cahaya Tengku Ampuan Rahimah
(RACTAR) by sending them delectable KFC meals for iftar.

5

Located in Subang Jaya, Selangor, RACTAR, provides shelter, food, and
education to orphans and unfortunate girls aged between 6 to 20 from all
over Malaysia. RACTAR is a non-profit organisation (NGO) and offers
vocational training in sewing as well as baking for teenagers aged between
17 to 20 years old.

The program for the day started around 4.00 pm with the distribution of
KFC pack meals for 50 children together with the Tourism Management
Department and MYTA team as well as QSR representative. Immediately
after distributing the meals, the team mingled (following the COVID-19
SOP) with the children sharing experiences and encouraging the
importance of education to ensure a better future.

Giving back to the less fortunate and understanding community needs is an
integral part of the Faculty of Hotel and Tourism Management (FPHP),
UiTM Puncak Alam, corporate values. The Tourism Management
Department, UiTM Puncak Alam, will continue to endeavour a similar CSR
program as one of the cornerstones to enhance community relationships by
collaborating with institutions and businesses.

BUBUR LAMBUK

PROJECT RAMADAN 2021

The month of Ramadan is a month full of blessing (rahmah) that is synonymous
with the act of charity. In the spirit of the holy month, the Department of
Culinary Arts and Gastronomy Management has collaborated with the Office of
Industry, Community and Alumni Network (ICAN) Shah Alam to organise a
Bubur Lambuk production project. As part of its corporate social responsibility
(CSR), the event was carried out to share with UiTM staff the bountiful
provision from Allah S.W.T and celebrate the joyous fasting month.

The Bubur Lambuk production project was held on Thursday, 22 April 2021. In
ensuring the event run smoothly, the pre-preparation or the mise-en-place for
the Bubur Lambuk ingredients and cooking equipment was done one day prior
to the event Mr Syaquif Yasin and his team have been delegated with the
responsibility of preparing and completing the mise-en-place. The Dean
himself joined the team and spent some time with the mise-en-place
preparation, even with his busy schedule.

7

On the day of the event, Dr Mohd Shazali Md. Sharif, the Head Centre of Culinary Arts and Gastronomy Management, was tasked to
helm the Bubur Lambuk production team. The event kicked off with the welcoming speech from Prof. Dato’ Dr Rahmat Mohamad,
the Vice-Chancellor of ICAN, and officiated by Dato’Chef Ismail Ahmad, the Director of Rebung Restaurant. Chef Ismail was
honoured to be invited as part of the Bubur Lambuk project. The event distributed more than 1500 packs of Bubur Lambuk to the
UiTM staff.

ACADEMIC MATTERS

THE PEO AND PLO

On 5th of May 2021, the Department of Hotel Management, Faculty of Hotel and
Tourism Management, UiTM Puncak Alam have a virtual meeting on development of
Programme Educational Objectives (PEO) and Programme Learning Outcomes (PLO)
for programme Bachelor of Science (Hons.) Hotel Management (HM240) via Google
Meet.

The meeting started with opening remarks from Head Centre of Studies
Department of Hotel Management, Mr. Mohd Noor Ismawi Ismail and continued
with the Chairperson of Curriculum Review for HM240, Associate Professor Dr.
Norzuwana Sumarjan. This virtual meeting was attended by several academicians
from the Department of Hotel Management. The expert clusters are invited to
share an idea and give the input. The identified clusters are Cluster Accounting &
Finance, Cluster Service Marketing, Cluster Service Management, Cluster
Hospitality Technology, Cluster Food & Beverage, Cluster Front Office Management
& Customer Service and Cluster Room Division.

9

The objective of the virtual meeting is to discuss
and develop PEO and PLO that are applicable for
programme HM240. In addition, the development of PEO
and PLO should balance between knowledge and
practical application to ensure that students are
well equipped with the knowledge and hands-on
experience, hence able to obtain immediate employment
in the hospitality industry upon graduation.

Furthermore, several issues have been highlighted,
such as planning for further discussion with industry,
alumni and stakeholders on syllabus development for
HM240. With a robust curriculum design that involves
participation from the industry and various
stakeholders, students will have an exciting career
opportunity in management, supervisory and
administrative positions in the hotel industry.

10

The curriculum review is a continuous process to
uphold Universiti Teknologi MARA’s (UiTM) vision,
mission and objectives; the Malaysia Education
Blueprint (2015-2025)(Higher Education); and other
national policies. In general, curriculum review
is a process conducted periodically and
systematically to improve an academic programme.

Department of Foodservice Management under the
Faculty of Hotel and Tourism Management, UiTM
Puncak Alam has conducted a series of curriculum
reviews to assess its two programmes, namely
Bachelor of Science (Hons.) Foodservice Management
(HM242) and Bachelor of Science (Hons.)
Foodservice Management with Entrepreneurship
(HM252). Due to the pandemic, the program was
conducted online using Google Meet. The series of
curriculum review was conducted on March 18, April
30 and May 18, 2021, and is still an ongoing
process.

11

As part of the process, the department will
produce a curriculum review handbook, providing
basic directions for the improvement of the
curriculum of the current and future needs as well
as developments in the global setting. Opinions and
suggestions of department members were taken
into serious consideration.

In the following round, the process will include
roundtable discussion, engaging every stakeholder
in the curriculum review process. At the end of the
curriculum review, it is hoped to organize the
academic programme for change in instruction,
assessment, procedures, and support that will have
the greatest possibility of leading to full and
sustainable implementation.

Congratulations
