with rustic
mashed
potato
topping

Served with vegetables of your
choice, this dish will keep you
warm on cold winter nights.

seRVes 6 to 8

3 large potatoes
Handful of chopped fresh rosemary
or 2 tsp dried rosemary
125ml low-fat milk
Salt and ground black pepper, to taste
1 medium onion
2 garlic cloves
500g lean mince
100g baby marrows, grated
1 medium carrot, grated
1 tin tomato-and-onion mix
1 packet tomato paste
60ml red wine
Fresh basil or oregano
1 tsp Parmesan cheese

• Place the whole, unpeeled potatoes in a
large pot and add enough water to cover.
Put the lid on and bring to a boil over
a high heat. Reduce to a medium-low
heat and simmer for 25 to 30 minutes,
or until the potatoes are tender when
pierced. Preheat the oven to 180°C.
• Cut the potatoes into chunks and
add the fresh or dried rosemary
together with the milk.
• Using a potato masher, mash
until mostly smooth, and then
season with salt and pepper.
• In a separate pan, sauté the onion
and garlic until translucent, and then
add the mince and brown well.
• Add the remaining ingredients
(except the Parmesan) and
reduce over a medium heat.
• Place the mince into an ovenproof
dish, top with the mashed potato
and Parmesan, and bake for
20 to 25 minutes, or until golden
brown. Serve and enjoy! FW
