The 2 different MAP technologies The basic principle of MAP packaging is to extend the shelf life of the food by changing the composition of the atmosphere inside the package. Basically, there are 2 different methods to change the atmosphere inside the packages: 1. Gas flushing type: Flush the package with MAP gases to push the original gases out of the package, until eventually replace the original gases with MAP gases. 2. Vacuum-Gas filling type: There are 2 steps for this type of MAP packaging. The first step is to vacuum the package with a vacuum pump, the second step is to fill MAP gases into the package. MAP gases The key to MAP packaging being able to effectively extend the shelf life of food is the right combination of MAP gases. The most common MAP gases include N2, CO2, and O2. Sometimes Ar and CO might be used, but only in very rare occasions. Nitrogen (N2 ) is an inert gas and owing to its production process, is typically relatively high purity. It is usually used for displacing air, especially atmospheric oxygen, in food packaging. This prevents the oxidation of food and inhibits the growth of aerobic microorganisms. It is frequently used as a supporting or filling gas, as it diffuses very slowly through plastic films and hence remains longer in the packaging. Carbon dioxide (CO2 ) is colourless, odourless and tasteless. It has an oxidation-inhibiting and growth-inhibiting effect on most aerobic bacteria and moulds. The gas is frequently used to increase the shelf life of food. The shelf life of packaged or stored food is normally longer, the higher the CO2 content. Nevertheless, many products can become sour if the dosage is too high. In addition, the gas can diffuse out of the packaging or be absorbed by the product – and the packaging thereby collapses. The use of supporting or filling gases can slow down this effect. Oxygen (O2 ) essentially causes food to spoil due to oxidation and forms the ideal preconditions for aerobic microorganisms to grow. As a result, oxygen is frequently excluded from modified atmosphere packaging. In some cases – typically red meat – processing is deliberately carried out with high oxygen concentrations, in order to prevent the red colour from becoming ‚pale, and to inhibit the growth of anaerobic organisms.
