Your Local Butchers

For many, a visit to the local butcher is a thing of the past.
As times change and the pace of life quickens we find
ourselves turning to more convenient solutions to beef up
our meals.

No one wants to be troubled by making a separate trip just
to buy meat. After all, when we get home with the hunger
pains gnawing away at us, all we want is for our meal to be
ready; in fact, Ready Meal is the actual name of a whole
aisle in the supermarket.

However, butcher shops are not getting the chop. They have a powerful weapon to fight back with, and
I’m not talking about the butcher’s knife. The very reason we should seek out our local butcher is simply
because, for something that plays such an important role in our diet, it’s alarming how little we know about
the meat we eat.

Most butchers have a wealth of knowledge and enjoy talking about their trade, because they are proud of
what they do. Often businesses are family run and go back generations, which means there are some very
creative family recipes scrawled across the blackboard to draw you in; how does a pork, stilton and port
sausage sound with your mash tonight?

In fact, there are said to be well over 400 varieties of sausage available in the UK, and the butcher will be
happy to help narrow down the wide range of meat on offer. He can advise you on the different cuts, and
perhaps even encourage you to do what you’ve been saying you’ll do for ages and try something new. Most
butchers are good cooks because they know the best way to prepare the meat, so making one extra stop on
your shopping trip means you will probably end up impressing your family with a tantalising dinner.

But perhaps a question we, the disposable society, should ask ourselves is, “Do I care how the meat I buy is
processed?” The answer should be “yes”. The consequences of eating tainted meat are well publicised, yet
most of us take a bite in blissful ignorance, especially when eating out. In the home we tend to show more
concern for hygiene, perhaps because when we are preparing raw meat we know that we are ultimately
responsible for ensuring it is fit for consumption by our loved ones.

The butcher also carries this responsibility, for all his customers, so you can rest assured that he is on the
ball with his hygiene. Small food retail businesses, such as your local butchers, have to operate the Hazard
Analysis Critical Control Point (HACCP), which is monitored by local authorities. It is a management tool
that ensures a structured approach to the identification and control of food safety hazards. The scheme is
based on the prevention of food safety matters throughout the
manufacturing, packing, design and storage processes.

Don’t believe the propaganda that supermarkets have better
standards. The local butchers’ livelihood depends on satisfied
customers. So next time you wheel your trolley by the meat
counter at the supermarket, don’t just grab that cellophane-
wrapped, neglected piece of meat. Go and ‘meat’ your local
butcher, shake his hand, show you appreciate his hard work.
Why not ask him some questions. The worst that could happen
is that you’ll have a friend in the business and you will enjoy the
best cuts of meat sliced to your preference.

Project Indigo

One boy’s adventure through time and space!

Hi, I’m Tom, a local Doctor Who blogger & I write about my adventures online at...
anadventurethroughtimeandspace.com

Project Indigo is my blog where I travel the world visiting people
and places associated with Doctor Who. In the Easter of 2019 I
went to Greenwich which was the filming location for the 1993
Doctor Who Children In Need Special ‘Dimensions in Time’. In this
charity episode the Doctor’s evil enemy The Rani is running amok
and has the Doctor caught in a 20 year time-loop in the East End
of London.

In the episode the Seventh Doctor and Ace are on their way to
China but the TARDIS unexpectedly materialises in Greenwich at
the Cutty Sark in 1973. The Cutty Sark was a British ship built for
trading tea, travelling to China like the Doctor attempted. She is
a clipper, a fast sailboat, and when built in 1869 was one of the
fastest sailing ships. Soon after came the development of steam
ships and the end of sail-based trade. She was used as a cargo
ship, then for training, then made redundant.
In 1954 she was moved to a dry dock in Greenwich and was preserved as a museum ship.
She is now a very popular tourist attraction.

The Doctor and Ace make their way to Albert Square where the Rani is rummaging
through the Doctor’s personal time stream and facing down the all the original Classic
incarnations of Doctor Who - Doctors 1-7! Not only do we see all the Doctors but a variety

of companions and enemies as we warp through space and time.
Not to mention a number of Eastenders characters too!

The resolution takes place back in Greenwich, the home of time, with
the Doctor returning to the TARDIS then travelling to the Old Naval
College. He discovers the Rani is trying to gain control of evolution
by transferring a Time Tunnel to the Greenwich Meridian Line. This
line runs through Greenwich and from pole to pole, Longitude Zero.
It divides East from West as the Equator divides North from South
and it lies at the centre of all time zones. Every place on earth is
measured in relation to this line. The Doctor deduces her plan in the
grounds of the National Maritime Museum and propels the Rani’s
TARDIS into her own trap - hoist by her own petard!

Maritime Greenwich has been a UNESCO World Heritage Site for 21 years. It was awarded
this status due to its outstanding contribution to history, culture and science. I had a
very interesting time exploring Greenwich and would definitely recommend it to anyone
intrigued by maritime history.

Three vampire bats who lived together in a cave were always boasting about

night one of them came back to the cave with blood dripping from his sharp fangs.
The others asked where he had been. He said, “Do you see that farm down there in
the valley? Well I went there and drank the blood of all three of the family.” The next
night the second bat went off and came back with blood all round his mouth and
front. “What happened?” the others asked. “Well, you see that inn along the road?
I went down there and hit every one of their 5 rooms! It was a blood bath!!” The third
night it was the last bats turn and when he came back he was covered in blood.
It was everywhere! The first two bats were amazed, and agreed he must have won,
but still wanted to know what happened. “Well, you see that castle on the hill up
there?” he said. “Yes, of course” they replied. “OK, and you see that big turret by the

castle gate?” “Yes.. Yes” they answered.
“Well...” said the third bat, “ I didn’t!!

My name is Holly and I am eight years old. I am a Springer cross

The Real Green Gardener, a Poole-based garden design and maintenance company,
were delighted to be a part of the winning team that built the Kingston Maurward
Artisan Garden at the RHS Chelsea Flower Show in May.
The Kingston Maurward garden was announced as one of the prestigious Silver Gilt
award winners.

Celebrating 70 years of
land-based education at Kingston
Maurward College in Dorset, the
garden embodied the philosophy
of the college, fusing contempo-
rary and traditional approaches
and artisanal craft techniques
such as the bespoke cupola made
by the college’s land-based
engineering students, sawn stone
paving and dry stone walling.
Created by the college’s garden
designer Michelle Brown, and project managed by Head of English & Maths, Joanna
Jeffery, the team worked closely with sponsors including stonework supplier Miles
Stone from Southampton, Goulds Garden Centre, The Real Green Gardener, Adapt
Landscapes, Greg Wilkes and Kingston Maurward students.

The project encompassed months of planning
and a 10 day set-up, some days in torrential
rain, to create the award-winning garden.
The Real Green Gardener’s Steven Howes,
said: “Everyone involved is immensely proud
of the garden and absolutely delighted with the
Silver Gilt award. It’s been a life-long
aspiration to be a part of the show and an
amazing experience working with Michelle
Brown to build her design for Kingston

We all love a bit of pampering, so to many of us this rates as an essential
part of our holidays now. Something that years ago, seemed solely for the
rich and the privileged, which is now available to all of us – around the
world. Spa treatments are no longer just exclusive to the world’s most luxury
hotels, but are widely available everywhere, and to suit most budgets.

Book a cruise, and one of the first extras clients look at is the spa facilities.

and refreshing ourselves during our precious vacations. Putting back into our health bank, what today’s

Thailand led the way in opening up our interest in massage as a form of wellbeing, in a country where the
average person has regular massage sessions – once you have tried it this is a form of relaxation to be
savoured. From exquisite Spas in luxury hotels, to a mat on the beach, they take this method of wellbeing
seriously. The healing properties of any kind of massage, especially a traditional Thai one promotes
general wellbeing and feeling of good health.
Many places in the Far East and now Indian Ocean feature their own experiences, with steam baths, local
herbal therapies, and Thalassotherapy pools. After a long flight, it’s relaxing to book trained specialists
who offer a range of rejuvenating treatments in tranquil surroundings.

Go to India and Bali, and the focus is more towards spirituality and wellbeing than expensive facial
treatments, manicures and other fancy additions. Yoga retreats, made famous in Bali by the film: Eat
Pray Love, show there is a place for periods of meditation and quiet
contemplation that benefits the soul and the mind, as much as procedures
that are lavish and cost loads of money.

room can rejuvenate, and is a wonderful way of passing a few relaxing

The Bourne Academy
National Greenpower Competition Success

and Best Presented Team

The Bourne Academy came 18th out of 57 competing teams in the most recent
national Greenpower race and, most notably, the team won ‘Best Presented Team’
overall on the day.

This year marks the 20th
anniversary of the Greenpower
Education Trust, a UK based charity
inspiring young people to excel
in STEM subjects and careers in
engineering. The Bourne Academy
entered their first Greenpower
event in 2012 with the support
of the team from Canford, The
Bourne Academy’s sponsor school.
Canford School bought the first kit
car ‘Bourne Bullet’ for The Bourne
Academy, kick-starting a fantastic opportunity for students.

The Bourne Academy’s Greenpower Team attended the season opener race
at Goodwood Race in May with their carefully crafted and finely engineered
racing car called the ‘Bourne Bobcat’ – this car represents two years of special
design, hard work and self funding – it was built and welded from scratch in the
Academy’s engineering workshop. The team took with them the Academy’s racing
mascot ‘Derek the Bobcat’ and bags of team spirit.

The team entered two races on the day and came 18th place out of 57 teams,
competing against private schools and corporates such as Jaguar/BMW –a
fantastic result! The team also came home with an award for the ‘Best Presented
Team’! Local company, Kingren Groundworks Limited, has proudly sponsored
The Bourne Academy’s Greenpower team, enabling them to purchase branded
safety helmets, gloves and racing/pit suits in Academy colours.

It was an excellent experience for the aspiring engineering students, who attend
a Greenpower Club weekly to work on the Academy’s Greenpower car. TED
Technician Mark Binstead, who runs the Greenpower Club at the Academy, says
‘All in all an excellent day with the students and car and Derek of course looking
amazing. Students were impeccably behaved, professional, and were full of team
spirit. As a consequence the judges voted unanimously that the team should be
given the Best Presented Team award.’

Not only has the recent success attracted further private donations from parents,
but another local school has donated two additional chassis for the Academy to
develop and use to expand the team. The Bourne Academy Greenpower team are
looking forward to the next race in June at Goodwood.

As a result of that experience, I published a
book “Las Montañeras” about indigenous
women who dedicate their lives to defend the
human rights of their communities.
Upon my arrival in England I decided to
pursue a different career and started to develop
the necessary skills to turn my hobby into a
profession and become a chef. Since then, I have
been involved in the catering and hospitality industry.
I started by preparing traditional Mexican Food for
family and friends, then began to participate in local festivals; then I received my first
opportunity as a chef in a busy cafe.
I decided to seek a new challenge and applied for a role at the newly-opened Rick
Stein restaurant in Sandbanks. Although I started as kitchen porter, I was pleased that
the team recognised my talent and promoted me to Commis Chef within just a few
weeks. Since then I have gained a lot of culinary skills, working with chefs at the top
of their field in different restaurants but my real passion is for Mexican Food .

There is no beating the taste of truly fresh
fruit and veg especially, when it’s yours!

July / August - Gardeners Tips

July in the garden should be a time to sit back and take a look at what you have achieved
over the past year. Fruit and vegetables are ripening fast, and the plants are flowering like
mad. Summer is now in full swing and we are heading rapidly for the harvest of our labours.
However if you have recently taken over a new garden or have yet to rid your ground of
Bindweed, here is how to do it. By hand and by laboriously picking it over. July is the month
when Bindweed will take over if left unchecked.
1. Pull as much Bindweed off any plants it is smothering as is possible. Don’t worry at this
stage if you break the stems.
2. Using a light border or hand fork, dig around the base of every Bindweed stem in sight.
Gently pull the white stringy roots, try to avoid breaking them. Sometimes the roots go deep
so dig in and pull as much root out as you can see.
3. In a few weeks you might probably see the reoccurrence of fresh Bindweed growth. If you
intend to rid your garden of this weed then you must dig them up as before as soon as you see
them. Do not allow them to take control.
4. Never compost Bindweed, either burn it or bin it.
5. The alternative is by using Glyphosate or Roundup, it is fiddly and potentially harmful to
you so do take care and use protective clothing, gloves and goggles.
6. Do not despair, you will beat it if you persist.

August is the last true month of summer and the garden and
vegetable plots are still at their best. If you are quick and want to
continue to enjoy the English salad season. There is time to sow
quick growing salad crops such as Lettuce, Rocket and radish.
Dead heading flowers is essential to prolong flowering well into
September as the later flowers come to their peak.

If you have a Wisteria and don’t know how to keep it flowering
better each year. There are some simple rules. Unless Wisteria is
pruned twice a year it will grow very large and almost certainly
out grow its allotted space and over time it will cease to flower. Take a good look at the Wisteria now
it always shows a huge amount of growth that it has put on over the summer, and it is time to cut off
the long whippy growth and all the laterals ( these are the stems that grow at an angle) from the main
branch at the base. This will also ensure the Wisteria does not grow into stonework crevices, drainpipes
or anywhere else where it can potentially cause damage. Harvesting and watering are the main tasks this
month. If you keep harvesting your fruit, courgettes and beans they will respond just like dead heading
flowers and continue to grow even more produce. Keep everything watered, not forgetting the bird bath,
pond, pots and especially any hanging baskets still in bloom.
