Stanhope, ‘anything worth doing is worth doing
well’. And may we add, probably best done by
no-one other than oneself. At Ramsbury our ambition
when it comes to sustainability and quality knows no
bounds. Only the best is good enough. We grow our
own wheat and we distil an incredibly smooth spirit,
the basis of our gin. Each and every step of the process
is carefully planned and thought through, to ensure it
is part of a natural cycle with no waste. The fact that
we do everything here at the estate – using only the best
ingredients from our land – makes our gin one of the
world’s very few ‘Single Estates’.

the Place

ramsbury estate is beautifully tucked into the roll-
ing, lush hills of Wiltshire. Cultivated fields are inter-
spersed with small woods, pheasants rub shoulders
with the deer and cattle graze in the meadows. The
river Kennet, a tributary of the Thames, winds its way
through the valley. At all times, people have come to
treasure this idyllic setting. The region has been inhab-
ited for as long as the isles themselves. Stonehenge is
just next door and the area used to be the royal hunt-
ing grounds. Our estate stretches across 19,600 acres
of chalk downlands. Because the soil is rich in chalk it
preserves moisture better than other soil, which offers
perfect conditions if managed in the right way. In short,
Ramsbury is quite simply a dream for us distillers.

at Ramsbury we combine years of experience and
good old-fashioned intuition with the latest techno-
logy. That know-how enables us to harvest the wheat
precisely on the day when it is at its best. We mill the
wheat right next to our shining copper stills and then
carefully distil the spirit. To reach absolute perfection,
we have chosen to bottle and label all our bottles by
hand. Thanks to the local process and the quality of
our ingredients, we are able to make a gin set apart
from all others. Produced with loving care, here at
Ramsbury.

the Wheat

Even the plumber down the road could probably
make a decent gin. But for it to be the best, you need
the finest raw material. At Ramsbury we select only
the finest Horatio wheat from our best fields. We know
exactly in which field the wheat has grown, we know
exactly when it was sown and precisely when it was
harvested. We consider this to be of utmost impor-
tance, as the fields vary in the amount of chalk, pH, the
number of sun hours and different cultivation histo-
ries. At Ramsbury we believe anything worth doing,
is worth doing well – and we know that by crafting as
soft and smooth a vodka as possible, we can create the
best basis for a damn good gin.

The Distillery ramsbury single estate

the Gin

the precise recipe for Ramsbury Gin is a well-kept
secret, only a few people know it. And it will remain
that way. However, the basis of our gin is our own
wheat vodka. In the distillation process we use water
from our own source and we add the classic ingredients
of a genuine London Dry Gin – Juniper, Coriander,
Angelica, Orris, Liquorice, Lemon, Orange and Cinna-
mon. In order to give our gin a unique touch, we also
throw in some fruit and peel from the exquisite quince
which we grow here at Ramsbury.

the Quince

when we had distilled our first batch of gin, there
was something missing. The spirits were smooth and
soft and the botanicals were delicious; it was quite sim-
ply a perfect London Dry Gin. But it lacked a certain
something. That’s when we set out into the orchard
where the quince trees grow, picked a fruit and added it
to our next batch. By a stroke of magic Ramsbury Gin
went from perfect to outstanding. This wonderful and
freshly scented gift of Vitamin C, which is said to have
saved Magellan from scurvy and scented the ladies of
ancient Greece, proved to be exactly what was missing.

Ben the Cycle

Ruth at ramsbury we make use of everything we have at
hand, without wasting anything. Everything produced
30 on the estate is part of a natural cycle; the wood chopped
in the forests heats the stills, the spent wheat feeds our
rare-breed cattle and pigs, the manure is returned to
the fields, the wheat is brought into the distillery and
the waste water is funneled back to the surrounding
nature, through a series of reed beds providing natu-
ral filtration. Everything must be sustainable, thought
through and part of the natural cycle we have created
here. We reckon our philosophy is the best way to look
after the land we are custodians of. And a good thing
for anyone who appreciates a better Dry Martini.

40 ml Ramsbury Gin
160 ml tonic

Ingredients
60 ml Ramsbury Gin
5 ml Dry Vermouth
Lime peel or a stick of
rosemary
Garnish
Lime peel

V-shaped Cocktail Glass
Method
Stir a generous measure of
Ramsbury Gin with a splash
of Dry Vermouth, pour
gently into a chilled V-shaped
cocktail glass. Garnish with
a spiral of lime peel or a stick
of rosemary.

Ingredients Wiltshire Quince Cordial
40 ml Ramsbury Gin Cut five quince into small pieces.
20 ml fresh lemon juice Place the pieces in a vacuum bag
30 ml Wiltshire Quince Cordial and add 1 litre of Simple syrup. Seal
Chamomile & lavender foam the bag and let it soak overnight in
a water bath at 64°C, so that the
Garnish quince softens. Strain and bottle.

Whisky Tumbler 30 g chamomile tea
0.5 l still water
Method 0.2 l Ramsbury honey
Shake Ramsbury Gin, fresh 0.1 l Simple syrup
lemon juice and Wiltshire 0.1 l fresh lemon juice
Quince Cordial. Strain the 2 egg whites
mix over ice and lace with
chamomile & lavender foam. foam method
Let the tea steep in 0.5 litres of
cold water for six hours in the
fridge. Add lemon juice, Rams-
bury honey and 2 egg whites.
Fill a siphon with the mixture,
add two carbonic acid cartridges,
shake well and place in the
fridge to set for an hour. Shake
the siphon before using it to
garnish your cocktail.

Herbal Collins

Ingredients Citrus Cordial
50 ml Ramsbury Gin 2 sticks of lemongrass
25 ml fresh lime juice 5 leaves of kaffir lime
25 ml citrus cordial 20 coriander seeds
80 ml club soda Peel from 2 bergamot oranges
Peel from 2 lime fruits
Garnish 0.5 l still water
Lemongrass and lime wheel 0.5 l granulated white sugar

Highball Glass Mix half a litre of water and
half litre of white granulated
Method sugar in a vacuum plastic bag.
Shake all the ingredients Add the lemongrass, kaffir lime
except the soda. Double leaves, crushed coriander seeds
strain over ice into a highball and the peel from bergamot
glass. Top up with club soda, oranges and lime. Seal the bag
garnish with lemongrass and and let it soak in a water bath
a lime wheel. at 64°C for 12 hours. Strain
and bottle.
