barefoot cafe Food from scratch right in front of you Trace your food back to its source Get to know people who cook for you What if you understand a little more about your “food” appearing in front of you? Yes, most of our tableware came from Lampang province. What are those ingredients? Where are they from? Who are the producers? How do they are transported here? And who are cooking for you? At the same time, we get to know who we are creating delicacy to. How beautiful you are (No?) and you can directly let us know how you like it without any barrier between us: producers and consumers. Barefoot is a tiny homemade restaurant presenting you comfort food which is based on local products and seasonal ingredients as much as possible. We have been trying to use food as a medium to connect everyone and relate things happening in everyday life
Dairy product by local producer We are choosing cheese, butter, and cream that for us, most fi tting in both taste and environment dimensions by supporting local producers and local ingredients. CREAM: To be honest, we fi rst started using local cream because of its balance taste full of fat and freshness... so yeah, deliciousness is also our fi rst priority. (try our panna cotta and you will understand the perfect of simplicity) BUTTER: It’s soooo fresh and unique! Why would we want to use commercial & imported butter when we found our precious here in Chiang Mai. CHEESE: Chiang Mai Parmesan and Mozzarella? YES! Their tastes are milder and not exactly like the authentic Italian ones. Why? Because they refl ect pretty much the charm of Chiang Mai. HALOUMI CHEESE: Miss Khai has been working closely with organic communities and specialized in dairy products. One of her most signifi cant homemade cheese which we are proud to present is Haloumi cheese. This kind of cheese makes a perfection combination in salad (barefoot Caprese, seasonal salad) with its mild and lovely taste when grilled.
MAETHA ORGANIC We heard about Maetha community back when we were freshmen. Maetha has always been the role model of an alternative and self-reliant community. Maetha organic uses CSA system to manage delivering their 100% organic products from the whole village to customers’ door every Wednesday morning with seasonal produces. It gives the feeling like when you buy lottery, we have no idea what will be in the box. It can be very local and native vegetables to strawberry or banana or honey and sometimes jam. (Try our seasonal salad)
Tomato sauce You might have seen lots of various kinds of tomatoes here and there everywhere in our kitchen and wondered why we do need that much amount. Our pizza sauce, Bolognese sauce, and Lasagna are all made of those fresh tomatoes. We start making sauce from fresh whole tomato then peel and cook it for hours before seasoning it a bit to bring out the best taste of the moment. We cannot fi nd any reason why we should buy canned ones in the country that you can grow everything. Ham and Bacon Our ham and bacon are home cured and made to order by a couple from Sansai who took courses in processed food and their standard can be guaranteed. Sausages Our 2 types of German sausages which are chicken Vienna sausage and pork Bockwurst have very outstanding taste. They are all made by a German guy who has lived in Chiang Mai for many years and runs his own business in Sankampaeng area.
FREE RANGE DUCK/ CHICKEN EGG Our signature noodle (or pasta) is made of fl our and duck egg. The reason is we fi rst wanted to have a restaurant where we support local producers and show our guests every single step where your food come from. Also, it must be comfort food that everyone feels comfortable with. We knew where to get really good quality eggs and we love how Thai food always use duck eggs then the answer was DUCK EGG PASTA. (It is the same answer still now) ...as simple as that. (for vegan option, you can ask for our no-egg pasta.)
Pizza Dough Our thin pizza dough is more like the combination of tortilla and naan. The reason we use this dough? Just because we love it! This is a small homemade restaurant like a friend’s house visit meal not an authentic one, remember? Heheee welcome to our home!
Ba Mee Ba Mee Khao Soi Khao Soi Pasta Dough Fresh pasta is not what we can experience much in Thailand. Here, we make pasta from scratch every single day. Our pasta consists of fl our and “free range duck egg”. We use eggs which are raised naturally in organic rice fi elds with hormones-free and antibiotic-free that make each pasta different in color and texture depends on the ducks and the surroundings. No Egg Pasta Another option for pasta if you feel like egg one is a bit too heavy for you today. Flour and some alkaline water will surprise you with its unique texture. It is lighter but also chewy and fi lling.
