Pasta ala Amatriciana
“Capolino style”

Ingredients

• EVOO ½ cup

• Dry White Wine ¼ cup

• Finely chopped sweet onion 1 medium sized

• Garlic cloves , minced 3 each

• Hot red pepper flakes ¼ tsp

• Pancetta thickly sliced and cubed 1/4lb

• San Marzano Italian tomatoes 1 large can

• Kosher salt & fresh ground pepper to taste

• Fresh Italian parsley ½ cup

• Fresh basil (can be dried)

• Freshly grated Italian cheese (Parmigiano/Pecorino Romano
combo)

Preparation

1. Heat up water, salt it when boiling, and cook the pasta al dente.

2. While pasta is cooking , heat up oil in a deep skillet, add the diced
meat and cook until it browns, make sure to stir.

3.Add the onion to the pan, together with the hot pepper flakes and
when it begins to soften add the garlic.

4.Continue to cook while stirring, without browning the garlic and
onions, then turn up the heat and add the tomatoes.

5. When boiling, add the wine and continue to stir over high heat,
until half of the wine evaporates.

6.Cook, stirring and break up the tomato plumbs, coarsely with a
utensil.

7. Add salt, black pepper, and basil, continue to simmer for 5
minutes.

8. Add parsley and stir.

9. Drain the pasta while al dente , turn into the skillet with sauce ,
cook a minute more , stirring the pasta to coat the pasta, and serve
with grated cheese.
