Overview of Food Science
LEARNING OBJECTIVES
• Upon completion of Define food and its function
this chapter, students
should be able to: Understand the trends and
interrelated operations
encompasses food industry.
FOOD
What is the definition?
Food is any substance which
nourishes the body and is fit to eat.
It may be solid or liquid.
3
Function of FOOD
1. Growth and repair( maintenance)
• Growing (increase height)
• Repair and renew tissues (hair and nails)
• To create new life (reproduction)
2. Producing energy
• Every living things require energy that are
produced and stored in our body.
3. Regulating both physical and mental activities.
• Basic movements such as walking, running,
moving and also sleeping.
• Used for mental health, as food alerts the
brain in learning.
4
What is food science?
• Food Science deals with the processing of raw
agricultural produce into food products that
are acceptable for human consumption
5
Continue
• Exciting field of study that applies sciences such as
Chemistry, Biochemistry and Microbiology to
discover ways to improve the taste, nutrition and
quality of the world's food supply.
• You will also learn about food preservation and
processing, food analysis, product development,
food packaging and the implementation of food
quality and safety systems.
6
Food processing
• Food processing is the transformation of raw
ingredients into food, or of food into other
forms.
• Food processing typically takes clean,
harvested crops or butchered animal products
and uses these to produce attractive,
marketable and often long shelf-life food
products.
7
Food analysis
• Food analysis is the discipline dealing with the
development, application and study of
analytical procedures for characterizing the
properties of foods and their constituents.
8
Food packaging
• Containers, packaging, and packaging materials for
processed and raw foods and beverages.
• It includes packaging intended to be used for storage
• It is also used for preparation of foods such as
microwave food containers
• Packaging materials may be intended for food
contact or designated non-contact, for example,
shipping containers.
• FOOD LABELING is also available.
9
Food Scientists
• Possesses the skills necessary to convert raw
materials into safe, attractive and consumable food
products and beverages.
• Constantly seek to improve existing techniques by
which new products are developed, processed,
packaged, stored and transported.

Six Reasons Why Study Food
Science?
• Job Security
• Diverse Environment
• The People
• Salary Possibilities
• The Food
• Travel Opportunities
11
Choices of FOOD
• Genetic engineering
- Process that allows plant breeders to modify
the genetics make up of plant species,
creating improved varieties faster & more
easily than can be done using traditional
plant-breeding technique.
- Example: Genetically Modified Food (foods
that have been produced and inject genes for
sustainability of the food).
12
Disadvantages of Genetically
Modified Food
• Allergic reaction
• Production of toxins
• Reduced nutritional value
• Release of toxins to soil
• Resistance of pests to toxins
• Disruption of biodiversity

Trends in food industry
• Focus on buying ethically or environmentally responsible
brands produce
• Locally grown produce
• Online groceries shopping
• Restaurant equipment trends
• Service trends
• Food trends
• Restaurant technology trends
15
• 67% of people agree that it has
become more important that the
brands they choose make a positive
contribution to society, beyond just
providing a good service or product.
• globally price still tops people’s stated
reasons for purchasing decisions
(68%), with reputation coming in third
place (44%).
Ipsos Global Trends Survey (2016)
16
• Around seven in ten (68%) globally
say that they are more likely to
purchase products that are locally
grown and in 19 of the 23 countries
surveyed, two-thirds or more want
local.
• Where the food is grown is even more
important to than how it is grown with
only 47% surveyed make it a priority
to eat foods that are organic.
Ipsos Global Trends Survey (2016)
17
• Uptake of online shopping still
varies by country, but it is growing
everywhere.
• 16% of UK purchases are made
online each year, 14% of
purchases in China and 12% in
Norway.
