WELCOME
TO QUÉBEC CITY

national capital of the Province of Québec
– yeah, a bit confusing!

Quebec City takes its name from an Algonquin word meaning
“where the river narrows”. The city sits on Cap-Diamant, the promontory
where the St. Lawrence River narrows between Quebec City
and Lévis, on the opposite shore. By the way, you can catch the ferry
to go to Lévis and have the best view of Quebec City. A short
stroll through Old Québec is all it takes to succumb to its charm.
Its French heritage comes through in the distinctive architecture
and the delicious food – no complaints there!
Quebec City has a long and fascinating history. It was founded
in 1608 by Samuel de Champlain, which makes it one of the oldest
cities in North America. It remains a bastion of the French language
to this day, and we’re proud to say, “French spoken here!”
And while Québec might have a long history, Quebeckers certainly
know how to celebrate today! You’ll love the joyful, vibrant atmos-
phere and warm greetings everywhere you turn.
Bienvenue!

TRADITIONAL QUÉBEC CUISINE

POUDING CHÔMEUR POORMAN’S
PUDDING
This popular desert was created by women factory workers during the Great Depression. It’s a basic cake
batter on which hot syrup or caramel is poured before baking. The cake then rises through the liquid that settles
at the bottom of the pan, mixing with the batter and creating a distinct layer at the bottom of the dish.
The syrup or caramel can be made from brown sugar, white sugar, maple syrup or any combination of the three.

FROMAGE EN GRAINS CHEESE
CURDS

Often called ‘squeaky cheese’ because of the sound it makes while you eat it, this cheese is absolutely delicious
as a snack, finger food or in the ever-popular poutine. Better eaten fresh, it’s a product with a mild, salty flavour.

POUTINE

You’ve probably already heard of poutine, created in rural Québec in the 1950s. French fries and cheese
curds topped with light brown gravy are the basic ingredients. Extra ingredients depend on your mood.
Poutine is the perfect ending to a big night out ;)

PÂTÉ CHINOIS FRENCHCANADIAN
SHEPHERD’S PIE
Created for people working on the Canadian Pacific railway, this is genuine comfort food. Every single Québecker
knows the three ingredients: ground beef and corn topped with mashed potatoes. And don’t forget the ketchup!

26

Drawing its roots from French cuisine, Québec’s cuisine was largely shaped by the difficult early years
after it was settled. Enduring harsh winters and having many mouths to feed but little to eat, people
needed dishes with real substance to build their new nation!
Today, many traditional dishes take pride of place at Christmas and New Year’s celebrations and of
course, in local restaurants.

TOURTIÈRE MEAT
PIE

Dating back to the 1600s, this meat pie will give you energy for a full day outdoors. Made with cubes of pork,
beef, chicken, moose – there are as many variations as the meat available and the family recipe. Everyone’s
grandma knows how to make the best tourtière in town ;)

MAPLE PRODUCTS

Impossible not to mention our famous maple products, which you can try in many ways and forms. A good way to
taste it for the first time is the popular taffy on snow that you roll on a stick like a lollypop. Don’t be fooled by fake
maple syrup – we have the real stuff!

SUGAR PIE

Want a melt-in-your-mouth dessert? Sugar pie is one of our favourites. Creamy maple sugar filling in a flaky
pie crust – goes best with a glass of fresh Québec milk!
