Cereal Bowl Cookies PROP STYLIST: BETH PAKRADOONI. FOOD STYLIST: JUDY KIM.
MAKES 24
2 cups sweetened fruit cereal
(like Fruity Pebbles)
3 cups all-purpose flour
¼ teaspoon salt
1 tablespoon baking powder
2 sticks unsalted butter, softened
1½ cups granulated sugar
3 large eggs
1 tablespoon vanilla extract
1 cup white chocolate chips
2 cups oat cereal with marshmallows
(like Lucky Charms)
1. Preheat the oven to 350 degrees. Line a
large baking sheet with parchment paper.
2. Throw the fruit cereal into a food processor
(or blender), and process until it’s ground up.
Set aside.
3. In a mixing bowl, combine the flour, salt, and
baking powder.
4. Using a standing electric mixer fitted with
the paddle attachment or a hand mixer with
regular beaters, cream the butter, sugar, and
ground cereal for 3 to 5 minutes or until light
and fluffy. Add the eggs and vanilla, and mix
until combined.
5. Slowly add the flour mixture and beat to
combine. Stir in the white chocolate chips and
oat cereal with marshmallows, but don’t
overdo it.
6. Using a cookie scoop, space the dough on
the baking sheet evenly. Bake for 8 to 10
minutes, until the edges are slightly golden
and the centers are still soft.
