INGREDIENTS FOR 2 PEOPLE:

400g piece of chicken breast
20g ginger garlic paste
1/2 tsp red chilli powder
salt to taste
juice of half a lemon
1/2 tsp garam masala
100g yoghurt

1) Cut the chicken into pieces, mix all the ingredients and leave
to marinate for one hour.

2) Preheat your oven or grill to a medium high temperature
(200 C/400 F/ gas mark 6).

3) Roast until the chicken is browned on all sides and tender.

4) Serve with salad and mint sauce. To make mint sauce, mix
yoghurt with salt, lemon juice and mint.

500ml peeled plum tomatoes
200ml water

50g ginger garlic paste
Salt to taste
50g sugar

50g yellow butter
10g oil

1 tsp garam masala
100ml cream

1 tsp kasoori methi powder
200g chicken tikka (as prepared in starter recipe)

1) Boil the peeled plum tomatoes with water, oil, ginger garlic
paste, yellow butter, salt, sugar, garam masala and kasoori methi,

until the 700ml reduces to 500ml.

2) Strain the liquid with a fine sieve, add the fresh cream and
chicken tikka and boil again for five minutes.

3) Serve hot, decorated with a small portion of butter and fresh
green coriander. Eat with rice and naan bread,

For the butter;

Pick your favourite fresh salad leaves (we’ve used a baby
Italian mix, but we also love
rocket - the peppery flavour really compliments the
mackerel)
One orange
A glug of good olive oil
Leftover fennel
100ml of white wine vinegar

1) Pre heat the oven to 220 degrees Start by washing your
mackerel - being sure to remove the bloodline and set to
one side. Then prepare the stuffing by finely chopping the
fennel (keeping a little aside for your salad), garlic, parsley
& shallots, add this to a large mixing bowl and grate the
lemon zest over the top, mix well, season with the salt and
pepper and set aside.

2) Tear one piece of foil and one piece of greaseproof paper
(both the same size and just enough to wrap the fish once),
place the greaseproof paper on top of the foil, place the
mackerel in the centre of the greaseproof paper, carefully
spoon in the stuffing and wrap. Place the mackerel on to a
shelf in the middle of the oven, it should only take around
25 minutes depending on the size of the fish. To check that
your mackerel is cooked you need to probe the centre of
the fish and the thermometer needs to reach 63 degrees.

3) While the mackerel is in the oven, add a knob of butter
to a frying pan and warm over a medium heat, add your
shallots and fry gently for about 5 minutes. When the
shallots are soft and golden then add the fennel seeds
and let those simmer for another 5 minutes. Now add the
rest of the butter and reduce the heat and let it continue
to simmer for around ten minutes, season with salt and
pepper and set aside.

4) Next, peel and segment the orange, add to a bowl and
pour over the white wine vinegar. After a few minutes drain
the vinegar and add the salad leaves, remaining fennel and
olive oil. Toss together and add spread over your serving
plate.

5) When the fish is cooked, remove from the wrapper and
place carefully on top of the salad. Spoon over the fennel
butter (be generous), grab your forks and enjoy.

Chefs Tip; Be very careful not to overcook the fish, the flesh
should be flakey and falling off of the bone.

Osnabrück is one of the four largest cities in Lower Saxony. Due to its good location, some of the larger

Osnabrück has plenty of hotels to offer. One
of them is the 4 star Romantik Hotel Walhalla.
With rates of around £93 per night, it is one of
the more expensive hotels in Osnabrück. But
it is fully worth it. They offer a spa with sauna,
a steam bath, solarium and the David Lounge
Bar with a wonderful beer garden. The equally
named Restaurant serves fresh traditional
cuisine. The hotel is located in a very central
location of the city, near the town hall.

If you would rather find a hotel purely for
sleeping, then hotels like the ibis Budget Hotel
City would be more suitable. The prices start at
£49 for one night. This particular hotel is right
next to the train station.

There are plenty of things to do in Osnabrück. If you are a sightseeing
kind of person, you can visit the famous town hall shown in the
image on the page before, the Dome Sankt Petrus or just have a
walk over the Heger Tor.

To all fans of cultural discovery. You can either visit the Felix
Nussbaum Museum (Shown in the top right corner) or the Theatre
(Shown in the top left corner).

If you want to go shopping you can do this on the Grosse Strasse
in Osnabrück or you can travel to the nearby citys like Hamburg,
Bremen or Dortmund.
