INTRODUCTION TO FOOD ADDITIVES Food additives are substances added to food to maintain or improve its safety, freshness, taste, texture or appearance. They are added to change food in some way before it is consumed IMPORTANCES OF FOOD ADDITIVES IN ICE CREAM MAKING - Ensure ice cream maintains its quality and taste over time - Ensure ice cream stays creamy


DESCRIPTION OF THE EXPERIMENT CONDUCTED Ice cream is a common dessert product that is produced through the pasteurisation and homogenisation of blended dairy products (typically milk, condensed milk, butterfat and cream) Other ingredients such as sweetening agents, flavouring, stabilisers, emulsifiers, colourings are also added to the mix. -It can also be made by whisking a flavoured cream base and liquid nitrogen together


INGREDIENTS 1/2 cup whole milk 1/2 cup cream 1/4 cup sugar 1/2 teaspoon vanilla extract 1 cup rock salt Ice Procedures// 1. 1/2 cup whole milk, 1/2 cup cream, 1/4 cup sugar and 1/2 teaspoon vanilla extract is added to a mixing cup and stirred until well combined 2. The mixture is added to a small zipper bag 3. 3. A larger zipper bag is prepared. 4. 4. The larger zipper bag is filled with a couple handfuls of ice and about half of the rock salt. 5. 5. The smaller bag is placed inside the larger bag and is covered with more ice and rock salt. 6. 6. The bag is wrapped in a towel and is shaken for 5 minutes. 7. 7. The liquid in the smaller bag turned into ice cream. PROCEDURES: 8. Ice Cream is then formed


SIGNIFICANCE OF THE RESULTS OBTAINED -The “ice” in “ice cream” is the result of the water in the milk freezing. Crystals form when a particular species of molecule is given the opportunity to align with other of those same molecules. These molecules have a habit of bonding in a patterned way, resulting in the polyhedral structures we call “crystals”. -Eventually, you get ice particles inside a thick, sugar-rich, syruplike liquid which does not freeze, that also contains small air bubbles and drops of fat. That is why ice cream isn't solid, but rather, a mixture of three states of matter: Solid ice, liquid sugar water, and air as a gas. -Ice cream is a calcium-rich food, and calcium helps keep your body strong and boosts your metabolism -Ice cream contains vitamins and nutrients which is important for a healthy immune system


RELEVANCE TO REAL WORLD APPLICATIONS Amazing for mental health -The instant high that you feel after indulging ice cream is not just because of that sugar rush. It has been found that having a cup of ice cream can also work wonders for your mental health as milk contains tryptophan which is responsible for the release of Serotonin which is a happy hormone. Instant energy boost -During hot summer, ice cream provides that instant boost of energy which we all need. Due to the presence of cream, ice cream can give you instant energy , fats and carbohydrates. It is good especially for growing kids. Adults on the other hand can go for low-fat milk variants. Antioxidants and flavonoids -When fresh fruits are added to your bowl of ice cream it not only increases the taste, but also adds a load of antioxidants. They can make your ice cream healthier.
