Sweet Bread

Dry Ingredients
4 Cups
1⁄2 Cup 1 Tbsp 2 Tbsp 1⁄2 Tsp
Flour // Bread Flour // Hi-Protein Flour
Sugar
Yis
Milk Powder Salt
Mix well all the dry ingredients.
Wet Ingredients
1 Cup Ice water 1 Egg
Mix well all the wet ingredients. Make sure you use “ice water” only. This to help creating the stretchy dough later.
Fat Ingredients
1⁄2 Cup Butter
Mix well all the wet ingredients. Make sure you use “ice water” only. This to help creating the stretchy dough later.
1st Round Kneading Process
1. Add wet ingredients to the dry
ingredients.
2. Knead the dough.
• Hand knead :around 20 – 30 minutes.
• Mixer knead : around 15 minutes.
3. Rest the dough for 10 minutes,
2nd Round Kneading Process
1. Add fat ingredient to the dough
2. Knead the dough.
• Hand knead :around 15 - 20 minutes.
• Mixer knead : around 10 minutes.
3. Knead until elastic *.
4. Rest the dough until it is double the size
*In baking, this elastic is referring to the term “bread window pane”.
You can search for this term to see how elastic your bread dough should be
Rounding the dough
1. Punch the dough to remove excess air.
2. Take 30 – 35 g dough // golf ball size bread dough.
3. Shape the dough by using the rounding technique. (search : bread rounding techniques)
4. Rest the shaped dough.
5. Before baking, you can glace the douvh with butter // milk // yellow egg. This will make your dough looks nice.
6. Bake in pre-heated oven 180oC around 20 – 25 minutes.
Notes
1. This is the basic sweet bread recipe of mine.
2. I did not use bread improver. However you can use it by adding 1 tsp of bread improver. The result will be much better.
3. You can use this recipe for making donut or other bread but please reduce the sugar to 1⁄4 cup as this dough is sweet.
