Method for the cheesecake
1. Pour CARTE D'OR Cheesecake Mix into a mixing
bowl and add cold milk and vanilla essence.
2. Mix with an electric beater on low speed until
combined, followed by 5 minutes on high speed.
3. Pour the cheesecake mix over the crust and
refrigerate until set (preferably overnight).
4. Fold together whipped cream, cream cheese and

GLUTEN GlutenWhat is
and how does it
affect the body?
Gluten is a protein found in the flour of wheat, rye,
barley and wheat relatives (spelt, kamut, emmer,
einkorn and triticale), and to some extent, in
oats. Gluten in flour contributes to the elasticity,
viscosity and the plasticity of dough. When gluten
has developed well it gives dough a satiny finish.
Hard flour, e.g. bread flour, contains more gluten than cake flour.
Durum flour, which is used in the making of pasta, contains
more gluten and this increases the stretching ability of pasta.
Rye flour has a lower viscosity and elasticity than wheat flour,
but a higher plasticity. This explains why bread prepared from
only rye flour is inclined to be lumpy.

Gluten forms a framework in dough. Gas is captured in this framework GLUTEN

omitting gluten will cause problems with elasticity, viscosity and
plasticity in a product, as well as affecting its leavening properties.
Several grains and starch sources are considered acceptable for a
gluten-free diet. The most frequently used are maize, potatoes, rice,
and tapioca (derived from Cassava root). Other grains and starch
sources generally considered suitable for gluten-free diets include
amaranth, arrowroot, millet, lupine, quinoa, sorghum (jowar), sweet
potato, and taro. Various types of pulses, soybean, and nut flours are
sometimes used in gluten-free products to add protein and dietary
fiber. In spite of its name, buckwheat is not related to wheat. Pure
buckwheat is considered acceptable for a gluten-free diet although
many commercial buckwheat products are actually mixtures of wheat
and buckwheat flours, and thus not acceptable.
Gluten does not contribute to weight gain or lead to any other
adverse health effects, unless you have an intolerance to gluten. Celiac
disease is a degeneration of the lining of the small intestine caused
by a sensitivity to gluten. The damage to the lining (villi) restricts the
absorption of nutrients from the gastrointestinal tract. Resulting
symptoms are a bloated abdomen, nausea, vomiting, loose stools, poor
appetite, and eventually malnutrition.

1 cup Almond flour
(or gluten free all-purpose flour)
½ cup Sunflower seeds
¼ cup Pumpkin seeds
¼ cup Sesame seeds
¼ cup Psyllium husks
2 tsp Baking powder
1 tsp Ground Himalayan rock salt
6 Free-range eggs
1 cup Filtered water
1 Tbsp Fresh lemon juice
2 Tbsp Mixed seeds to sprinkle on top
Method
1. Pre-heat oven to 180 °C.
2. Line a 8.5 X 22 cm loaf tin with baking paper.
3. Mix all the dry ingredients together.
4. Beat eggs and add to try ingredients, mix well.
5. Add liquid ingredients to dry ingredients, and mix well.
6. Pour mixture into loaf tin, sprinkle with seeds and press down lightly.
7. Bake for 50 minutes, once cooked allow to cool.
8. Slice loaf and serve.

1 L Orange juice 1. Pour orange juice in a saucepan with 500 g
sugar.
1 L Balsamic vinegar
2. In a different saucepan, pour balsamic vinegar

3 kg Frozen peas 3. Stir both mixtures. Put on the stove and simmer
until the consistency of both is a reduction.

4. Steam 2 kg peas for 8 to 10 minutes.

5. Chop and sauté 500 g onion.

6. Place the steamed peas and onion in a food

12. Press the blended pea mixture through a drum
sieve and keep aside at a warm temperature.
13. Deep fry the julienne cut potatoes until golden
brown and season well.
14. Place all components decoratively on a serving
plate and serve immediately.

7. Finish the cooking process off in the oven at
4 kg Chinese egg noodles, cooked al dente 165 °C for 8 minutes.
8. When cooked, soak noodles in seasoning, strain
off water and let dry.
9. Deep fry the noodles until crispy, and shape.
10. Blend the Tomato Pronto mix until smooth, then
construct the different components on a serving
