Bacon Wrapped Pork Tenderloin Stuffed with Cream Cheese & Pineapples - $600 Pork tenderloin is considered the filet mignon of the pig. We take this one to the next level by butterflying it open and stuffing it with cream cheese mixed with pineapple pepper jelly and chopped pineapples. Then we make it even better as we roll it up, wrap it with bacon and grill it to perfection! Once off the grill, it gets a coat of sweet heat BBQ Sauce and gets sliced up. Trust us, you will be going back for another slice This dish is a huge hit for dinner or any get together. Most classes are 1 hour long unless noted. There will be 3 different cameras set up to make sure you don’t miss anything and to keep everyone engaged. We also use a lapel mic to assure you will have great audio. We take ground chuck, breakfast sausage and mix together with our competition seasoning. Then roll it up into a ball, stuff a piece of cheese in the middle and wrap it with bacon. Once grilled, we drizzle them with a BBQ sauce glaze that turns these into a flavor bomb. Sweet, savory and delicious! Sweet heat Glazed Cedar Plank Salmon- $600 When salmon is cooked right, it is without question one of the best fish to come out of the water. We cut the salmon into bite size pieces, dust them with a rub and cook them on a cedar plank to give them flavor like you have never had before. We finish them off by dunking them in our signature sweet heat glaze. Simple mouthwatering!
Grilled Prime Ribeye Steaks - $600 All ribeye steaks are not created equal~ Did you know that a certain cut of a ribeye steak is the most coveted steak you can buy? We are going to blow your mind when we show you the differences and why you want to always pick this particular cut. Once we cover that, we are going to take you on a steak journey like never before. We’ll show you the proper way to trim to build maximum flavor. Then comes the rubs, not just some ordinary rubs, but layers of rubs that were developed by World Champion Steak Grillmasters. Next, you will learn how to set up the grill and put those beautiful diamond marks on it. When you bite into this steak, you will then realize those layers of flavor we created... just became a harmonious explosion in your mouth. Yeah, it’s that good! Maui Wowie Burger - $600 This is not your typical burger! We will show you how to build intense flavor with the meat. As we grill it, we add prosciutto and Havarti cheese. Then we’ll make a decadent Hawaiian slaw that will take this burger over the top! The flavor and crunch factor on this burger is epic. It is the WOW factor you have been looking for in a burger! Mexican Street Corn Tacos - $900 First, we show you how to grill sweet corn. Then we add a fajita dust rub to the chicken tenders and grill them to perfection. This will get added to a skillet along with a supporting cast of yummy goodness to build incredible flavor. Put this all in a grilled flour tortilla and you will have one of the best tacos you’ve ever eaten. Bacon & Pepper Jack Cheese Cajun Stuffed Chicken Breast - $900 We start off by making the holy trinity of South Louisiana. Then we take that, stuff it a chicken breast with piles of pepper jack cheese and bacon. Once we add our competition rubs, we will teach you how to grill this chicken to perfection. Then it will get a BBQ glaze that will take this chicken to a level you never thought was possible! This is chicken on steroids!
Competition Smoked St. Louis Pork Ribs - $1000 (approximately 1.5 hours long) There are ribs and then there are ribs that will send your taste buds to a place they have never been before. Our competition St. Louis Pork Ribs have made us a lot of money on the circuit. We wow the judges by giving them a little savory, little heat, touch of sweet and just the right amount of smoke. You will learn all the details from trim to taste on how to cook the best ribs you have ever had! Andouille Sausage & Cream Cheese Stuffed Pork Chops - $900 We take a center cut pork chop and stuff it with one of the most popular sausages in Louisiana, Andouille Sausage! Yep you read that right, pork in pork! Before we do that, we cook up our holy trinity, mix with the Andouille sausage and cream cheese and stuff it in the pork chop. Then we grill it and top it off with a cajun sweet apple wood jalapeno BBQ sauce and peach habanero glaze. There are no words that can describe how good this is! Port Wine Brined Smoked Ham With A Pineapple Glaze - $1000 Ever had a ham that was so salty it tasted like you were licking a salt block? It took several years to perfect this amazing port wine brine we use to soak our hams in for 18 hours. This brine is magical on what it does to the ham. The depth of flavor is throughout the ham and the rubs we use will create a bark on the outside that is truly one of a kind. Then we drizzle a Pineapple Glaze over the top that will have you dipping the ham in on every bite! Pomegranate Cranberry Glazed Brine Smoked Turkey - $1000 (November-December) Tired of boring turkey that lacks flavor? That is where we will step in and show you how to do turkey right. It all starts with our brine to develop flavor throughout the entire turkey. Then we will show you how to smoke the turkey to perfection! That’s right, no more turkey breast that is as dry as saw dust. You will be amazed when you see the one trick we do that will allow the beast to be tender and moist! Rest assured, this turkey will have flavor all the way to the bone! Once we glaze it with our Pomegranate Cranberry Glaze the flavor jets in your mouth will have you cooking this every year for the holidays!
Texas Style Smoked Beef Ribs - $1200 This is brisket on a bone! And there is nothing like it! We will show you how to smoke them to develop that rich, buttery flavor, as the fat renders down and the bark is formed. When you bite into these bones you will wonder why it took so long for them to come into your life. Smoked Prime Rib - $1200 Can you imagine a slow smoked rib eye steak. This is it! This class has all the details from the grade of meat to select, rubs to use that were developed by the World Champion steak cookers, cooking process, and the perfect internal temperature to cook it to. Tender, melt in your mouth, perfection! Yes, you can get all that in every bite! Competition Smoked Brisket - $1500 (approximately 2 hours long) This is the holy grail of the cow! When cooked wrong it will be the toughest, driest piece of meat that you have ever tried to eat. BUT, when you learn how to cook it to perfection you will experience one of the most amazing cuts of meat to ever come off a cow. Brisket has been my strongest category on the competition circuit from day one. In my first ever competition, a state champion cook off, against 49 teams, I had a 1st place brisket! This is a very in depth class that will show you everything from selecting the best brisket, how to trim, inject, which rubs to use and how to smoke it to absolute perfection. You will learn every technique and trick I use when cooking my competition brisket. Once you cook a brisket using the techniques and recipes from this class you will certainly become the king or queen of your cul de sac or next backyard cook out.
