It was born to welcome the Twentieth Century.
We remain a very limited production (3.500 bottles).
It is a very special cava. The grapes of this Cava come from the
oldest vineyards. Its production is reduced. The vines are
between 40 and 50 years old. It is a piece of art.

Elaboration
Traditional varieties of Penedes are vinified separately. The
blending process is done and the resulting wine will age in
barrels for about 5 months. The elaboration process is done
following The Traditional Method.

Tasting notes.
Bright, golden color. It releases small bubbles, slowly and
continuously. It has a complex and pleasant aroma, it shows
scents of yeast, almonds and toasted. It has an ample,
harmonious and elegant taste.

Coupage: 75% Xarel·lo,15% Macabeo and 10% Parellada.

Alcohol content: 11.5% Vol.
Expedition liqueur: Nonexistent.
Disgorging: Manual.
Ageing: 36 months minimum.
Serving temperature: 6-8 ° C.
Riddling: Manually in riddling desks.
Food pairing: appetizers, foie gras, seafood, fish sauces, rice

Cava Brut Nature

This is an exclusive cava, made from five varieties of grapes,
soft and very elegant.

This is Unique.
It wakes senses.

Elaboration.
The grape varieties are vinified separately. Once the wines are
stabilized the blending process is done using wines from
Chardonnay, Pinot Noir and from traditional varieties of the
Penedes.

Tasting Notes
Bright golden color. With slow release of small bubbles.
It has a complex aroma of mature fruit and nuts.
In the mouth it is balanced, full of pleasant sensations.

Coupage: 50% Chardonnay, 35% Pinot Noir, 15% Macabeo,
Xarel·lo and Parellada.

Fuchs de Vidal Rosé, Pinot Noir
Cava Extra Brut.

It has a very limited production.
Made exclusively with the Pinot Noir grape variety.

Elaboration
The Wine made with Pinot Noir variety will be use to elaborate
the Cava Fuchs de Vidal Rosé following the Traditional Method
or “Méthode Champenoise”.
The minimum ageing is 15 months.
It has a small addition of expedition liqueur to provide a
delicate sweet touch.

Tasting Notes
It has light red color. The bubbles are continuous and small. Its
aroma is fruity with strawberries notes, it is fresh, elegant and
has a long palate

His long period in our cellar has been culminated with the
quality, fineness and elegance that it represents our Cava. It has
not liquor addition, showing this way its personality.
It is the Cava for the most exigent palates, long aging lovers.

Elaboration
The traditional varieties of Penedes, Macabeo, Xarel·lo and
Parellada are vinified separately. The wines are blended to
elaborate the Cava Fuchs de Vidal Gran Reserva following the
Traditional Method. The ageing process takes at list 30 months.

continuously with crown formation.

This Cava has the combination of the bouquet and the fruity
notations, maintaining a dry palate.
It is a limited production Cava.

Brut Cinco, Cava

After the aging period in our Celler it is added 5 grams per liter
of liqueur of expedition, there for its name, Fuchs de Vidal Brut
Cinco (“cinco” means five).

It is fresh, soft and balanced.

Elaboration
Macabeo, Xarel·lo and Parellada are vinified separately. The
blend of those wines will be use to elaborate this cava following
the Traditional Method. The minimum aging is 20 months. It
has an addition of expedition liqueur to provide a delicate sweet
touch.

Tasting Notes
Straw yellow color, bright. It has a good release of fine bubbles
and crown formation. Aroma of flowers, herbs and ageing. It
has a very balanced taste, fresh with a great structure.

Food pairings: aperitif, ham, dry fruits, and deserts.

Capità Vidal, Reserva
Brut Nature.

This cava represents the tradition of our Celler. Its rustic
presentation is like the first bottle of Cava that we produced.

This elaboration of this cava is very limited.

Palau Solà
Cava Brut Nature.

The Cava Palau Solà is young and fruity.
Made with the traditional varieties of Penedes.
Any occasion is perfect to enjoy this cava.

Elaboration
Macabeo grape varieties, Xarel·lo and Parellada are vinified
separately. Then the blend is made to prepare the cava Palau
Solà following the Traditional Method or “Méthode
Champenoise" The minimum ageing of this Cava is 12 months.

Tasting Notes
It is pale yellow and bright. Presents a constant releases of
bubbles. It has a pleasant aroma, with good intensity, has fruity
notations. The taste is balanced and elegant, has a lasting
aftertaste.

Cava Brut Nature.

Quatre Barres is a Young Cava with a pleasant aroma and well
balanced.
As we say on the label it is a stimulus for the senses.

Elaboration
The varieties of grapes Macabeo, Xarel·lo and Parellada are
vinified separately. The wines are blended to elaborate the Cava
Quatre Barres following the Traditional Method. The ageing
process take at list 12 months.

Clos Vidal Blanc de Blancs

ORGANIC WHITE WINE

Organic wine certified by the EU legislation.

It is fresh, soft, dry and fruity.
Xarel·lo is the predominant grape variety in the blend of this wine.
To the classic blend of Penedes we add a small percentage of
Muscat de Fortignan that gives the wine a fruity touch and
distinguished.

Elaboration
The harvest of each variety is made at the optimum time. Each
grape variety is vinified separately.

The whole grapes are macerated to obtain more body and aroma.
The pressing is soft, extracting 0.60 L per kg of grapes.
Fermentation takes place slowly, controlling the temperature at 18 °
C. For 5 weeks the wine is in contact with its lees to gain
complexity. Finally the blend of different wines is done to create
the organic wine Clos Vidal, Blanc de Blancs.

Tasting Notes
Bright pale yellow. It presents a clean aroma of apple, pear and ripe
grape. The palate is fresh, dry and well balanced.

Food pairings: Ideal with appetizers, Fish, seafood and light meals

D.O. Penedes: Young wine, harvest 2016
Coupage: 70% Xarel·lo, 10% Macabeo, 10% Parellada and 10%
Muscat de Fortignan.
Alcohol: 12 % Vol.
Serving temperature: 8-10 °C.
Gastronomy: snacks, salads, seafood, Fish, cheese fondue and light
meat poultry.
Presentation: Bordelesa bottle, 75 cl.

Clos Vidal Rosé Cuvée
Organic Rose Wine

Organic wine certified by the EU legislation.

This wine is characterized by its attractive pale pink and fruity
aroma.

Elaboration
Each grape variety is vinified separately.
The elaboration process is based on a short maceration, the must
maintain contact with the skins of the grapes to obtain a light color.
A gentle pressing is done, extracting 0.55 L per kg of grapes. The
fermentation process is slowly in stainless steel, controlling the
temperature at 17 ° to enhance the flavors of the grape. The wine
remains in contact with its lees for about five weeks to acquire
greater complexity.
Finely the blend of the different wines is done to create
the wine Clos Vidal, Rosé Cuvée.

Tasting Notes
Pale pink, very bright. Clean and good intensity, the aroma is
attractive, with notes of berries.
On the palate is fresh and well balanced.

Food pairings: rice, light meat. Italian and Japanese
cuisine.

Coupage: 35% Syrah, 30% Merlot y 35% Garnacha.

Clos Vidal Merlot, 2014
Red Wine

Merlot is the predominat grape variety in the production of this
wine, was also used a 15% Tempranillo that it gives to complexity
and balance. With the period of 6 months
the wine has acquired notes of oak ageing without overlapping the
characteristics of the grape variety.

Elaboration
The elaboration process consists of a pre-maceration of the grapes
with low temperature to acquire more body and enhance flavor.
Then the alcoholic fermentation of the must takes place in stainless
steel tanks, the must is in contact with the grape skins to obtain the
desired color. Malolactic fermentation is made in stainless steel
tanks and in barrels.
The ageing process begins in French and American oak and ends
then in the bottle where the the wine is refined and equilibrated
gaining complexity and elegance.

Tasting Notes
Shiny cherry red color. Its aroma is intense and attractive with
notes of red berries and ageing process. In the mouth, well balanced
in body and acidity, with noticeable tannins. It has a long taste.

Harvest: 2014.
Coupage: 85% Merlot, 15% Tempranillo.
Ageing: 6 months in barrel and then to the bottle.
Alcohol: 13 % Vol.
Service temperature: 17-18 °C.
Gastronomy: Ideal with stews, meat and cheese.
Presentation: Bottle Bordeaux high 75 cl.

Clos Vidal Cabernet Sauvignon, 2014
Red Wine

With the grape variety Cabernet Sauvignon and small percentage of
Syrah we made the blend of this wine. The ageing process begins in
the barrels and ends in the bottle where the wine is rounded.

Elaboration
The elaboration process consists of a pre-maceration of the grapes
with low temperature to acquire more body and enhance flavor.
Then the alcoholic fermentation of the must takes place in stainless
steel tanks, the must is in contact with the grape skins to obtain the
desired color. Malolactic fermentation is made in stainless steel
tanks and in barrels.

Coupage: 85% Cabernet Sauvignon, 15% Syrah.
Ageing: 6 months in American and French barrel and then in bottle.
Fermentation: 18 days of average controlling the temperature
at 24 ºC.
Alcohol: 13 % Vol.
Serving temperature: 17-18 °C.
Gastronomy: Ideal with stews, meat and cheese.
Presentation: Bottle Bordeaux high 75 cl.
