Good day Southview Members! I hope everyone has been out Saturday & Sunday
enjoying the “heat” of the summer. The golf course has never
looked better and we are reaping the benefits of the hard Closed
work that Mike Paape and his crew have been putting in all
season long. We can all do our part to help keep it that way by GOLF SHOP
remembering to replace all divots with the live divot, when HOURS
possible, and when not possible, use the provided sand and
seed mix. When on the greens, remember to fix your ball mark Monday
and one more. On the days that we are on the grass of the 11:00 am - 7:00 pm
practice range, please remember to use the “linear” pattern Tuesday - Sunday
when making divots. (See picture). 7:00 am - 7:00 pm
With all of the activity on the golf course, there has been much activity in the MAIN OFFICE
clubhouse as well. The banquet business has been picking up with the loosening of
restrictions due to COVID. The View is enjoying its first full season with the newly 651-451-6856
renovated member space and the popcorn machine is back!

We have been continuing to hire to keep up with demand with some of our most
recent hires like our new Assistant Food and Beverage Manager Patrick Hogan. Patrick
started with Southview in Mid-July and has been a big help from day one. He brings
knowledge from a management level with his past experience working at Tamarack
Tap Room in Woodbury and Bonfire in Eagan. Chef Chris has also brought in a couple
of new people including Jennifer Ewing who has experience in all areas of the kitchen
but has a passion for pastry. Keep an eye out for her creations in the upcoming new
menu. Chef also brought on Aaron Rateau, who spends most of his time as a prep
cook setting up the kitchen for success for both banquets and member dining
functions.

the best product and service for the Southview membership.

As I wrote my June newsletter article pointing out all the
outrageous drought and heat statistics we saw last month, I
didn’t really think that this could continue, or get worse for
that matter. Not in Minnesota anyway. Well, folks, this is a
good old-fashioned drought, and when it’s all said and done, it
just might be one of the worst of its kind in this area. We’ve
certainly witnessed our fair share of storm systems develop
throughout the month of July, only to fall apart literally around
Southview Country Club. We had 3 rain events throughout the
entire month of July and only totaled 0.82” throughout the
month. Since May 1st we’ve only seen 2.7” of
rainfall. That’s extremely dry for this region, and it has been coupled with abnormally
hot weather as well. On a positive note, the lack of rain has certainly helped Leibold
Irrigation keep moving along nicely!
We have now witnessed Leibold Irrigation installing mainlines throughout most of the
golf course thus far, and once they’ve completed the mainlines, they will jump right
into the lateral lines more than likely in the month of August. On Monday, August 9th
you will see some large equipment set up to bore underneath Mendota Rd. to connect
the two sides of the Irrigation system. This may take a few days that week, so please
be patient around the area of the 10th tee. It has been a pleasure to work with all of
these professionals so far, and it truly is impressive to see their productivity on a
daily basis. If you see Leibold Irrigation out on the course, please feel free to give
them a tip of the cap, or a friendly hello.
As you’ve probably already noticed, we have started our process of re-grassing our
no-mow areas. This is quite an extensive process and will require a great deal of
cooperation from the membership by staying out of these areas completely during the
infant stages of the process to make it go as smoothly as possible. The clean-up
process is quite a project itself. We need the current no-mow areas to be cut down
and free of any grass clippings first and foremost. We then spray round-up around the
borders of each of these areas with a small hand-held sprayer just like you would with
the sharp point of a colored pencil in any one of your favorite coloring books. Once
all the borders have been sprayed, we will take the large sprayer and spray the middle
of each of these areas. It is very important to not drive your carts through any of
these sprayed areas as you could track the round-up elsewhere. Once all the areas
start to discolor, we will then spray everything a second time to ensure the complete
death of the plants. We will then go in and disrupt the surface of these areas and seed
with our own specific blend of fine fescue. It is a long and painful process, but the
end result will be well worth it!

Ambassador, Frank Fiorito, a MN Golf Legend! Amazingly our Men’s Invitational is

Hello all, first and foremost, I would like to thank the Southview
members, guests, management, and staff for welcoming me to
the club. I am very excited to be here and to learn, grow and
mentor our culinary team as well as the front-of-the-house
team!
In other F&B news, the new menu is just
around the corner and in the final proofing
and printing stages. Two of the new menu
offerings are the charcuterie and cheese
boards, both shareable and changing. I
consider myself is a charcuterie connoisseur
and I am excited to bring in cheeses from
around the world. I will have weekly
selections and descriptions on all cheeses
(see below).
Moroccan Fiery Spice Cheddar
This Cheddar has a savory blend of green and red
bell peppers, green and red chili peppers, crushed
chili and garlic
Beemster with Mustard
This cheese is fantastic, from the once boring
Holland Gouda this blend of Mustard and Mustard
