Orange & Banana Jello

"My Grandmother made this Jello for us it seems every time we went to her house
to visit. It is my brother's favorite. It was always served in the same bowl - she did
not use a mold for it. She topped it with real whipped cream that she made
herself that morning. My mom continues to make it "special" for my brother's
birthday every year, in the bowl that was handed down from my Grandmother."

ingredients & items you need



1 can (11 ounces) mandarin oranges
1 can (8 ounces) crushed pineapple
Water
1 package (6 ounces) orange gelatin
1 pint orange sherbet, softened
2 bananas, sliced
instructions


Drain oranges and pineapple, reserving juices.
Set oranges and pineapple aside.
Add water to juices to measure 2 cups.
Place in a saucepan and bring to a boil; pour over gelatin in a large bowl.
Stir until gelatin is dissolved.
Stir in sherbet until smooth.
Chill until partially set (watch carefully).
Fold in oranges, pineapple and bananas. Pour into an oiled 6-cup mold.
Chill until firm.

Avocado & Apple Brussels Sprouts

I like eating light refreshing meals in the summer time. Here's a simple salad I like
to make.

ingredients & items you need



1/2 lb brussels sprouts
1 avocado
1 apple
1/4 cup extra virgin olive oil
1 tbsp apple cider vinegar
1.5 tbsp lemon juice
2 tsp honey
Dash of salt & pepper
instructions




Slice Brussel sprouts and apples.
Cube avocados
Add the Brussel sprouts, apples & avocados in a bowl
Make your dressing (oil, apple cider vinegar, lemon juice, honey, dash salt and pepper).
Give it a good mix
Pour dressing into your bowl and top off with any other toppings you want.
You can also top off with Pumpkin seeds or sliced almonds, dried raisins.

Really Red Rhubarb Smoothie

This recipe is my favorite because of the simplicity and the color! It requires a bit
of work, but the end result is so deliciously sweet that it's worth it!


ingredients & items you need



2 stalks rhubarb, trimmed and thinly sliced (1 1/2 cups)
¾ cup water
1 cup frozen unsweetened whole strawberries
1 cup frozen unsweetened raspberries
½ cup raspberry or strawberry sorbet or sherbet
Ice (optional)
instructions



In a small saucepan combine the rhubarb and water. Bring to a boil; reduce heat.
Simmer, covered, for 6 to 8 minutes or until the rhubarb is very tender. Stir in strawberries;
let stand for 2 minutes (do not drain).
Transfer the rhubarb mixture to a blender. Cover and blend until very smooth, stopping
and scraping sides of the blender as needed. Add raspberries. Cover and blend until
smooth. If desired, strain the mixture and pour it back into the blender. Add sorbet. Cover
and blend until smooth. If desired, add ice. Cover and blend until desired consistency,
adding additional ice as needed.
Pour into tall glasses and serve immediately.
