and more fulfilled than anything I buy and put under the tree. I
want to personally thank all of you for you kind words over the
years. It’s nice to hear you enjoy a recipe or, “you have a drawer full
of cut out recipes”, it makes it all worthwhile. Merry Christmas to

This year we decided to theme our holiday
issue“the Gift of Giving”. I am never surprised at
how generous our communities are! People in these
parts are GIVERS. They simply want to help and make
other people happy. Be it from the variety of telethons,or
when disasterstrikes the PEOPLE step up and Give. I am so
very proud to be part of a team of people that are no different.
When it is said there is no “I“ in team believe me “I” believe it
The gift of giving comes in many forms. Sometimes you give
unknowingly, for example—We try to support our local community
and surrounding area as much as we can. We donate to the Lions Club
and other groups who in turn help those in the community who need
a helping hand. We give our time and resources to groups and service
clubs who need a little bit of help throughout the year.
We promote as much as we can the wonderful activities that bring
economic growth to local businesses and groups in the Espanola,
Massey and surrounding areas. The gift to give doesn’t always mean
items of monetary value. It can be listening and helping to solve
issues big and small. It can be spreading the word when budgets don’t
exist. A gift isn’t always something you hold in your hand—it can be
something that brings you happiness, health and fortitude.
We are PROUD Northern Ontarians that face challenges in our region
such as extreme weather conditions that can wreak havoc on our
service providers.We appreciate the gift of understanding that comes
from our clients who know how special our little communities are!

1.Cut the lime into wedges and the orange into rounds and slice in half.
2. Add the liquid ingredients to a large punch bowl or pitcher.
3. Toss the orange slices into the punch as garnish.
4. Use a wedge of lime to wet the rim of a glass. Dip the glass into a

shallow dish filled with green sugar.
5. Pourinto the rimmed glass and add a frozen cranberry(Rudolph nose).

Best Mashed Potatoes

These mashed potatoes are perfect to make the day before
holiday dinners. I made them the day before Thanksgiving
and itgave me one less thing toworryaboutthe dayof.Afterpreparing
place a casserole dish and allow to cool.Coverwith foil and place in the
fridge. The next day remove from the fridge, allow it to come to room
temperature, add the butter to the top and bake low until warmed
through. Of course they also can be baked right away.

Best Mashed Potatoes

• 5 pounds Russet potatoes
(peeled and diced)
• 1/2 cup Butter (divided)
• 4 oz Cream cheese (1/2 a block)
• 1/2 cup Half and Half
• 1/2 cup Milk
• 1/2 teaspoon Seasoning salt
• 1/2 teaspoon Pepper

Add peeled and diced potatoes to a pot and cover with water. Bring
to a boil, reduce heat, and allow to simmer for 20-25 minutes until
potatoes are tender. Drain your potatoes and then return them to the
pot. Return pot with potatoes to the stove on low heat. Add 5 tbsp of
butter and cream cheese to the pot and start mashing. Once creamy,
slowly add half and half and milk. Add just a little at a time until you
get the consistency that you want. Keep mashing then add seasoning
salt and pepper.Stirand place in a casserole dish.Add remaining 3 tbsp
of butter to the top and bake at 350 degrees for 10-15 minutes or until
butter is melted and potatoes are warm.
