Long Clawson Dairy was founded in 1911 by 12 local farmers
who formed a farming co-operative, with a common purpose;

to manufacture top quality Stilton®.

From humble beginnings, the company has prospered and today we have 37 of our own farms
supplying 65 million litres of milk a year. We are one of only five creameries accredited in the
world to produce Blue and White Stilton® using traditional methods controlled by the Protected
Designation of Origin (PDO), an EU designation in addition to the Certification Trademark (CTM)
overseen by the Stilton Cheesemakers Association (SCMA). Both state Stilton® can only be

made in, with milk from, the counties of Leicestershire, Nottinghamshire and Derbyshire.

Today Long Clawson Dairy still operates as a farming co-operative, we have full traceability of our
milk supplies and all our farms are Red Tractor accredited – an independent UK animal welfare
and farming standard. We continually ensure all our milk we process meets the highest quality
standards that we and our customers stand by. We work closely with our farmers to ensure they
produce milk with correct levels of fat and protein; critical to producing the best Stilton®.

Each Stilton® is individually hand selected and graded before leaving the dairy ensuring we
deliver the rich flavour and creamy texture Long Clawson’s Blue Stilton® is renowned for.
We also produce a range of other speciality cheeses such as Rutland Red®, Blue Shropshire
and a wide variety of blended cheeses, especially our very own White Stilton® blended with
various fruits. We take pride in developing a range of products that meet customer and market
needs, whilst striving to drive innovation based on flavour trends, making each one of our

products truly unique.

BLUE SHROPSHIRE

FULL FLAVOURED, MELLOW BLUE CHEESE

Our Blue Shropshire is produced in a very similar way to Blue Stilton®,
the only difference is the addition of annatto which delivers the distinctive
rich orange appearance. This also creates a slightly milder, less sharp flavour
compared to Blue Stilton®. Again, each cheese is individually hand selected and
graded before leaving the dairy to ensure we deliver a full flavoured, mellow

blue cheese Long Clawson’s Blue Shropshire is renowned for.

AGED RUTLAND RED®

SWEET WITH A RICH NUTTY FLAVOUR

Our Award Winning Aged Rutland Red® is a traditional handmade Red Leicester.
Each cheese is cloth bound, coated in butter, and matured for at least six months
in our state-of-the-art cheese rooms, this in turn, produces a slightly sweet, nutty
flavour and rich orange appearance. Proudly our Aged Rutland Red® is the only

pasteurised Red Leicester produced in the county of Leicestershire.

SAVOURY BLENDS

Long Clawson produces a wide variety of sweet and savoury blends, including
our world-renowned Cotswold – Double Gloucester with Onion & Chives and
Huntsman® – Double Gloucester with Blue Stilton® layers. We use a variety of
base cheeses including Mature Cheddar, Red Leicester and Long Clawson’s very
own White Stilton®. Next we add various flavour combinations from traditional
fruits such as apricots or cranberries to more adventurous additions such as
scotch bonnet chillies and toffee! Long Clawson Dairy have various sweet and

savoury blends to suit everyone’s preference.
