There are a lot of ingredients that you do not have to use if you feel you may not like them, however I will say the uniqueness of this dish is the addition of these pungent spices. I have listed as optional if you choose to leave them out. You can also if you wish just use your standard Bolognese sauce. I can confirm the children will love this dish, it is also nice hot or cold, and perfect for a packed lunch or picnic. This dish is often an addition to any BBQ in Cyprus or Greece. • 1. Make your meat sauce, fry onions and mince and add all the rest. Let it cook well and thicken for flavour. • 2. In a saucepan make bechamel sauce, melt butter in the pan on low heat, add flour slowly it will thicken, then add very slowly milk in small amounts to absorb the paste. Keep stirring to prevent lumps keep adding milk. Remove from heat stir in your egg yolks. Finally add nutmeg, 50g cheese and season • Cook pasta for 10 minutes. Strain , then add feta and egg whites. Mix well. • Lay pasta in the base of the dish. • Spread meat sauce on top • Pour bechamel over the top of the sauce. Sprinkle remaining cheese. Bake in the oven 180 on fan for about 45 minutes, or until a nice brown crust. The addition of egg white to the pasta base helps the pasta hold firm when cutting. INGREDIENTS large baking dish 10” - 14” Pasta Base 450G bucatini or penne pasta 110g feta cheese/cottage cheese 2 egg whites Meat sauce. Your version of bolognese sauce or.. 900g/ 30oz. lean ground beef 2 red onions (finely chopped) 2 cloves of garlic (chopped) 400g can chopped tomatoes 1 tbsp tomato puree 150ml/ 5 fl.oz. red wine/or beef stock 1 bay leaf optional 1 cinnamon stick optional 1 clove optional 1/4 of a cup olive oil salt pepper (to taste) Bechamel sauce topping 120g plain flour 120g butter 1000 ml milk 2 egg yolks 100g strong cheese Pinch of nutmeg + salt to taste.

It is the story of Gretel, Bruno’s sister. Gretel is 93 and living in Mayfair London, a place she tells us she has always wanted to live. Gretel was married very happily to Edger but is now widowed, she has a son Caden. Gretel is consumed with guilt about her past life during the war, and her families part in it, although she was only 12 at the time, Gretel was very aware of her fathers part in the horror, his role being Commandant of one of the most notorious refugee camps in Poland, and the circumstances in which her brother lost his life. These facts dominated Gretel’s life and have a great influence on how she lived throughout the story. At the end of the war, her father was killed for his crimes and she and her mother fled to France, under an assumed name, although Gretel’s name was not changed. Their life there is always under fear of being “found out”, and when it is, there follows a horrific attack on Gretel and her mother, Gretel’s mother never recovers fully and after her death, Gretel decides to travel to Austria to start a new life, on her journey she meets Cait, they become best friends, deciding to share a flat together. While in Australia, she meets David, a Jewish boy and they fall in love with each other, but when David discovers Gretel’s past he is horrified and ends his relationship, all the time Gretel is unaware that David’s best friend Edger is in love with her, and finds the courage to declare his love for Gretel, in the circumstances Gretel finds herself, she agrees to marry Edger, this does become a loving marriage between the two. After settling in the UK Gretel’s best friend for many years now is Heidi, her neighbour who lives in the apartment across the hall to Gretel, they see each other every day have coffee and chat. Although Heidi it seems is becoming very forgetful. All is well in their world until one day the flat just beneath Gretel becomes vacant and new tenants are expected, Gretel worries that it may be a young family and she would not be able to cope with the noise of children coming from the apartment below. As Gretel feared it is a couple with a young boy, but this family is not the type Gretel expected, the husband Mr Alex Darcy-Witt is a well respected film Producer and his wife Madelyn was a film star but now house wife and a mother to Harry. Over the following weeks and months after the young family moved into their Mayfair apartment, Gretel is pleased to say that she developed a friendship with Madelyn, and Harry appeared to have made Gretel his friend, over time Gretel becomes aware that all is not as it seems with this family. Harry seems to have more than a few bumps and bruises for a boy his age and his mother seems to be a little “accident prone”, explained away by the result of her drinking too much. As the situation becomes more desperate. Gretel feels she has witnessed and seen more than enough cruelty and violence in her life and feels she cannot accept the way things are, so decides to do something about it, to try and set Madelyn and Harry free to live their lives without fear.
