Graeme Swain thought-

opening up the floor for a sometimes
excruciatingly honest commentary
on the dish. A diverse room of eight
paying guests, some local and some
visiting, give scores on the dish’s pre-
sentation, taste, and creativity as the
kitchen staff anxiously awaits a ver-
dict at Gather, the restaurant Graeme
co-owns with his wife, Christine.

The filet is a contender for one of Gather’s weekly
specials and perhaps an eventual menu mainstay.
The restaurant opened on New Year’s Eve 2014 and
it seeks to blend the styles of the Midwest and West,
a little traditional and a little contemporary, all based
around the open forum attitude of the now infamous
“2sday Tastings.”

The menu, featuring favorites such as steamed pork
buns with kimchi and elk bolognese over hand-cut pap-
pardelle, changes seasonally and also offers weekly spe-
cials based on the tasting verdicts. “It is just like being a
judge on Chopped or any of the other shows where you
get to vote on the dish items that make it to the weekly
specials,” Graeme says. The popular “2sday Tastings”
book months in advance.

Each fall and spring, the team also selects the best
weekly specials which will then make it into regular
rotation on the menu, which is overseen by executive
chef Clark Myers, who joined the team this fall. “Our
restaurant truly believes in the power of many over the
power of one and this creates our restaurant’s balance,
flavor, and style,” Graeme says.

The allure of the mountains and a tight-
knit community finally pulled Graeme to
Jackson in 2011 where, working remotely
for restaurants in Omaha and San Diego at
first, he began to envision owning a restau-
rant in his new home.
Gather was soon born, filling a unique
niche in the Jackson dining community.
Graeme delights in welcoming critique and

Buffalo Meat Company: organic,
grass-fed, all-natural. And while
they are all accurate, there is only
one word that owner Dan Marino
is really concerned with: healthy.
Well, maybe make that two,

The Jackson Hole Buffalo Meat Company
started as Jackson Hole Cold Storage in 1947.
Marino bought the business 18 years ago and is
now its third owner.

Marino grew up in Boulder, Colorado, where he
learned to hunt, fish, and cut meat. He moved
to Jackson 36 years ago and spent 25 years
teaching skiing. When he saw the meat com-

The band Canyon Kids was born in the
Snake River Canyon. Bo Elledge and Mimi Holiday
Dusty Nichols were rafting company Simone Perele
photographers with some free time on their
hands when they weren’t snapping shots of Spanx
rafters headed downstream. “We ended up Stella McCartney
spending a lot of time down in that canyon
together, and we’d often bring our guitars and do Wacoal
songwriting down there,” Nichols explains. They
soon dubbed their collaboration Canyon Kids.

Their second album, Best Loved Poems of the American People, began
streaming online in the fall and their full release is planned for this
winter. But the project was a year in the making. They crafted their
music at the Teton Artlab where they were able to take their time and
record on a relaxed schedule. “This was a much more spaced-out and
relaxing way to record,” Nichols says, comparing it to the hectic pace
of working with a producer.

Both Nichols and Elledge have their share of recording experience.
Before Canyon Kids, the two were part of the five-piece band Elk
Attack. The group quickly gained attention for their work and went on
tour, but eventually the group decided to part ways, leading Elledge
and Nichols to collaborate as a duo.

What’s not to love about
untracked powder and a
driver who will take you there?
Welcome to snowcat skiing at Grand
Targhee Resort in Alta, Wyoming, where
skiers and snowboarders are transported
by snowcat to the deep, perfect powder
that lies in wait.

Roaming a private area located just south of lift-accessed ter-
rain, Grand Targhee Resort’s Snowcat Adventures showcases
a side of the resort not everyone gets to see. “You’re riding
untracked lines throughout the day with only 12 other skiers or
boarders,” says Jennie White, marketing manager for the resort.
Grand Targhee employs the use of two snowcats to allow
skiers and boarders access to this treasure trove of powdery
goodness. Snowcat skiers meet up with their drivers at the
top of the Sacajawea Lift, and under the watchful eye of
trained guides, they are given access to a full day of back-
country conditions.
“It was the best powder day I’ve ever had,” says Teton Valley
local Heather Minor, who reminisced about her experience
snowcat skiing last year. “The guides definitely made the trip.”
Patrons can expect a day of high-intermediate skiing and above
on their snowcat adventure. They should also be ready to expe-
rience 8,000 to 14,000 feet of vertical throughout the day.
And for those who might be unsure of what to expect, Grand
Targhee offers a “powder-up” lesson for anyone interested in
getting a preview. “It’s the best blower, hippie pow turns you
can get,” local resident Heath Leosh says.
The 602 acres that make up Grand Targhee’s Snowcat Adven-
tures are considered backcountry terrain, but thanks to the
hard work of ski patrollers and guides, the area is far safer
than venturing into traditional backcountry areas. “We felt
very safe,” Leosh says.

ories of endless powder turns that almost
required the use of a snorkel. The atmo-
sphere is one of complete joy, as each skier
is granted access to a blank, snowy canvas
with which to slash some turns—all in the
midst an awe-inspiring Teton backdrop.
And if the idea of untracked powder isn’t
enough of a hook, take it from the locals. “Cat
skiing is a great way for people to get out and
experience the Tetons,” Leosh says. n
