This is a chili recipe I have been perfecting for a few years now. I love the
balance of heat and sweet that the use of the different chiles will give you. Makes 7+ servings

This is my red chili recipe that I use in ICS Chili Competitions. I was able to 3 hrs.
cook it with Brian Baumgartner during a chili demo at the 2021 ISC World
Championship Cook-Off. I had a great time with Brian. Makes 7+ servings
INGREDIENTS Directions
• 3 pounds tri-tip beef • 3 tablespoons cumin 1. Brown the beef and sausage using the oil.
2. Mix the following spices in a separate bowl:
Texas Chili • 1/2 pound mild pork sausage (I use Tone’s®)
garlic powder, chili powders, cumin, cayenne
(I use Jimmy Dean®) • 2 teaspoons cayenne pepper, and Spanish paprika. Set aside.
3. To a large pot, add the can of El Pato® tomato
• 1 tablespoon oil (I use pepper sauce, beef broth, chicken broth, and three-
quarters of the spice mixture. Bring to a boil.

2 hrs. 30 mins. I attended my first chili cook-off in 1974. I got hooked, and I started cooking
competitively a few years later in Houston, Texas. The chili newspaper, called

Stir clockwise and well. Bring to a boil, then simmer for 2 hours

You might say that Dianne was “born to cook chili.” She and her
sisters began competitively cooking in 2007 to honor their father,
Richard “Dan” Edmonson. Dan had won the honor to cook at the
CASI Terlingua International Chili Championship in Terlingua in
1983, but was tragically unable to attend. Dianne and her sisters,
Lisa, Terry, and Elaine, have won multiple cook-offs, including the
Terlingua International Chili Championship at Terlingua, Texas,
Ladies State, and others. Dianne’s win in September 2021 netted her
the prestigious title WCCC ICS Homestyle World Chili
Champion in Myrtle Beach, SC.
Dianne and her family and friends continue
to cook competitively. Living outside of
Boerne, she and her husband, Patrick, enjoy
the outdoors, fishing at the coast, their three
children, and six grandchildren.
