Berry-licious French Toast
Makes 6 to 8 servings OVEN
INGREDIENTS ▪ 3/4 C. heavy cream, divided
▪ 1 loaf (1 lb.) sliced ▪ 2 T. pure maple syrup, plus more
cinnamon-raisin bread for serving
▪ 6 eggs ▪ 1 to 11/2 C. fresh blueberries and/
▪ 1 tsp. vanilla
▪ 1/3 C. milk or raspberries
▪ 1 C. powdered sugar
Heat oven to 375˚F. Lay two big sheets of heavy-duty foil on top of each
other on a rimmed baking sheet and spritz with cooking spray. Set the loaf
of bread in the center of the foil; fold the edges up around the bottom half
of the loaf to hold the bread in place and keep the egg mixture contained.
Fan out the bread slices slightly.
In a bowl, beat the eggs. Whisk in the vanilla, milk, 1/2 cup of the cream,
and 2 tablespoons of the maple syrup. Pour the mixture slowly over the
top of the bread, making sure to soak both sides of each slice. Scatter the
berries over the top, pushing some between the slices. Cover the bread
with another big sheet of foil; crimp the edges to seal the bread inside.
Bake for 30 to 45 minutes until the eggs are set, removing the top foil
during the last 10 minutes if necessary to prevent overbrowning.
Mix the powdered sugar with enough of the remaining cream to make
a drizzling consistency. Open the foil and drizzle the glaze over the bread.
Serve with maple syrup.

Balsamic Veggie Salad
Makes 4 to 5 servings STOVETOP
INGREDIENTS ▪ 1 small red onion, chopped
▪ 11/2 lbs. red potatoes, cubed ▪ 1 tomato, diced
▪ Salt ▪ 2.25 oz. can sliced black
▪ 3/4 lb. fresh green beans, trimmed
olives, drained
and quartered
▪ 1/4 C. chopped fresh basil ▪ Black pepper to taste
▪ 3/4 to 1 C. balsamic vinaigrette
Put the potatoes and 1 tablespoon salt into a big saucepan and add cold
water to cover by 2". Cover and bring to a boil. Cook about 10 minutes or
until the potatoes are just tender; transfer the potatoes to a big bowl to
cool. Dump the beans into the cooking water and boil for 3 to 5 minutes;
drain and plunge the beans into ice water.
When everything is cool, add the beans, basil, onion, tomato, and olives
to the potatoes. Pour about half the vinaigrette over the salad and stir
gently to coat; stir in as much of the remaining vinaigrette as you'd like.
Season with salt and black pepper. Chill several hours before serving.

Slow & Easy Pork & Slaw Combo
Makes 6 to 8 servings SLOW COOKER
INGREDIENTS Place pork tenderloin in a slow
▪ 2 lbs. pork tenderloin cooker; pour root beer over the top.
▪ 12 oz. can root beer Cover and cook on low for 8 hours,
▪ 11/4 C. coleslaw dressing until pork shreds easily. Meanwhile,
▪ 14 oz. pkg. shredded mix coleslaw dressing, coleslaw
mix, bell peppers, onion, and
coleslaw mix parsley; chill until serving time.
▪ 1/2 green bell pepper, diced
▪ 1/2 red bell pepper, diced Shred the cooked pork; discard
▪ 1/2 C. onion, diced the juices. Stir BBQ sauce into
▪ 3 T. parsley, chopped the shredded pork. Serve on buns
▪ 18 oz. bottle BBQ sauce topped with the slaw.

Bacon Corn Dip
Makes 8 servings STOVETOP
INGREDIENTS ▪ 1/4 C. sour cream
▪ 6 strips bacon, chopped ▪ 2 green onions, thinly sliced
▪ 3 C. corn kernels, thawed if ▪ 1 tsp. sugar
▪ 1/4 tsp. salt
frozen; drained if canned ▪ 1/2 tsp. black pepper
▪ 1/2 C. onion, diced ▪ Crackers and/or tortilla chips
▪ 1/4 C. red bell pepper, diced
▪ 1 jalapeño, seeded and diced for serving
▪ 4 oz. cream cheese, cut into
small cubes
Cook bacon until brown and crispy. Transfer to a paper towel-lined plate
to drain; set aside until cool.
In a mixing bowl, combine the corn, onion, bell pepper, jalapeño, cream
cheese, sour cream, green onions, sugar, salt, black pepper, and cooked
bacon. Refrigerate for at least 1 hour before serving. Serve with crackers
or tortilla chips.

Zesty Orange S’mores
Makes 1 serving per 1 graham cracker CAMPFIRE
INGREDIENTS Toast marshmallow. Layer
▪ Marshmallows segments of milk chocolate
▪ Milk chocolate candy bars candy bars, toasted
▪ Orange zest marshmallow, and orange
▪ Chocolate graham crackers zest between split chocolate
graham cracker.
