There's a better way to win Big Bucks other than buying a Texas lottery ticket.
Every Thursday in May, we will be drawing names of Amarillo Club members
with the possibility of winning up to $1,500 each and every Thursday evening.
Here's how it works:
1. All member's names are placed in a drum.
2. A name is pulled every hour starting at 6 PM last pull is at 8 PM.
3. First name drawn could win $500.
4. Every hour in which no winner has been drawn, $500 will be added to the POT until 8 PM,

at which the last drawing will be worth $1,500.
5. Winner must be in attendance at the Amarillo Club at the time of the drawing to win!!!
6. We will also be drawing at 6:30 and again at 7:30 for other prizes. This will be from a list of

members that are actually in attendance at the club.
The Fine Print:
1. All winners of $1,000 or more will receive 50% in cash and 50% in food credit to be

used before the end of 2017.
2. Only one winner per evening for the large prize.

CHEF'S Korean Braised Short Ribs

CORNER Executive Chef, Joseph Guzman

Ingredients The Braising Liquid

• 10 bone-in short ribs, trimmed of • 2 Cup Brandy
excess fat • 2 cup Hoisin Sauce
• 2 ½ cups low-sodium soy sauce
• ½ Cup peanut oil • 2 cup brown sugar
• 8 Chopped Yellow Onions • 1½ Tbsp red pepper flakes)
• 4 Chopped Carrots • 2 cans Dr. Pepper
• 1 Tbsp. minced Garlic • 1½ cup mirin
• 4 Whole Chopped Ginger Root

Directions

• Season and sear short ribs with peanut oil - deep brown color. Pull
short ribs.

• Caramelize yellow onion, carrot, ginger, minced garlic till golden brown.
• Place braising liquid, vegetables and short ribs in a hotel pan and place

in the oven 350 for 3 hours. Check each hour - want fork tender
• When ready pull short ribs and strain the sauce - reduce sauce by half

Featured Member

Vincent Matteson W (Vinnie) and Caroline Harris have been
members of the Amarillo Club since May 2016. They have enjoyed
many special events at the club and have shared our fun, unique
social gatherings with several prospective members. Vinnie and
Caroline enjoy the great atmosphere at the club on special nights
including DJ and Karakoe night, and Piano Bar night with Jason
Patrick. Caroline often brings her clients and has lunch meetings
with colleagues at the Club 30, knowing the staff will respect their
privacy while providing excellent service.
Vinnie and Caroline like to workout, hike, enjoy outdoor activities,
spend time with friends and family and travel. Caroline was a
collegiate cheerleader at the University of Oklahoma where she
received bachelors degree in accounting. She is a residential,
commercial, ranch and farm Realtor with Gillispie Land Group.
Vinnie went to college in Arizona and owns Matteson Homes
where he is a remodeler, and builds custom homes and commercial
properties.
We congratulate them on their one year anniversary at the club and
thank them for their support.

Dear Members,
We have several exciting events planned for you during May. We start the month with Poker night on Fri, the
5th followed on Saturday the 6th with our Bingo Night. On Friday the 12th we will have fabulous Seafood
Buffet. Followed by our delicious Mother’s Day Brunch on the 14th. Rollback Wednesday will be on the 17th.
On Friday the 19th we will be featuring a Magic & Comedy Night on the 31st floor. On Saturday the 20th we
will be featuring a Bourbon Tasting. Mr. Clay Stribling will be conducting this tasting.
We are continuing the Pot of Gold night. This will be held every Thursday along with 2 for 1 Night. We will be
featuring a drawing for the possibility of winning up to $1,500.00. Please refer to the write up in this newsletter.
As I stated last month you the member are the heart of the Amarillo Club and we need your help to increase
our membership numbers. I know you feel that your club is a very special, exciting place to bring family and
friends, and even colleagues. So if you have a friend, client, neighbor or colleague that you think would be a good member of the club
please contact myself and I will handle all of the details.
As a reminder members who do not notify the Club of cancellations at least 24 hours in advance will be charged 100% of the event
price. This policy will be in effect for the Mother’s Day.
After careful consideration and analysis I recommended to the Board and they agreed that the club will no longer offer Food or Bar service
on Monday’s after 2 PM. This will be effective May 1st. The club will be closed the entire day on May 29th in observance of Memorial
Day.
My door is always open and I welcome all comments and suggestions. So the next time you are at the club please stop by and say hello.
