The 2nd annual Women’s Golf Trip will take
place May 1-4th 2023 at the spectacular
Torrey Pines Golf Course, San Diego, CA. The
site has been host to multiple tournaments,
including Farmers Insurance Open and two
U.S. Opens (2008 and 2021). The Rolling Hills
arrangements are to stay at The Lodge at
Torrey Pines with play options on both the
North and South courses of Torrey Pines.

TENNIS DIRECTOR
NOVEMBER EMPLOYEE OF THE MONTH
A native of England, Karl Jones was a top-ranked junior CODY FREISCHLAG
player and earned a scholarship to play college tennis at
the University of Nebraska. Karl has worked with many TENNIS PROFESSIONAL
top-ranked junior tennis players as well as recipients
of college scholarships to tennis programs including
Dartmouth, Princeton, Yale, Harvard, USC, and Michigan.
Karl served as the Head Professional for Anthem Country
Club in Las Vegas, NV where he coached and managed
numerous league teams between 2.5 and 5.0 while also
operating his own tennis store, which had 3 locations
in the Las Vegas and Henderson area. In addition, Karl
currently serves as the Vice President for the USPTA
Intermountain Board, where he helps create networking
and career opportunities for fellow professionals. He will
become President once current Colorado native, Andy
Zodin, finishes his term in January 2024.
Karl will be joining the Rolling Hills Family in January
2023, but has planned a day to come out beforehand to
meet all of you. Karl will be visiting the Club on December
10th. This will be a casual open house meet and greet
with cocktails, hors d'oeuvres and some fun time on
the tennis courts. Stop on in any time between 1:00 pm
and 4:00 pm to say hello and welcome, have a couple of
cocktails and spend some time on the courts with our
new Tennis Director.

A Warm Holiday Greeting
On behalf of my staff and I, we would like to wish all of our members and families a
blessed Christmas and a safe and happy holiday season.
As I reflect back on 2022, I am very humbled by the support and help I received from
my staff, the Board of Directors, and you the members.
We navigated through some challenging change as a club in 2022; it's my belief that all
of our changes will provide a foundation for sustainable success well into the future!
Your patience throughout the process was much appreciated. I am so thankful that
the pandemic is in our rear view mirror.
Thanks again for a memorable year! My team and I are excited about serving all of
you in 2023!

CHEF OF THE MONTH
Congratulations! Southern Glazer’s Wine and Spirits
"Walking into a well-known country club in Golden, guests are
greeted by the sounds of laughing club members heading back
to the golf course after a nice lunch, the smell of freshly made
pasta, and the comforting crackle of a wood-burning fireplace.
This is a normal Wednesday for Chef Dominic Menna, who is
hard at work in the kitchen, crafting the day’s specialty dish.
Wednesdays are special at the club, as Chef Menna channels
his childhood into a made-from-scratch Italian dish that doesn’t
disappoint.
Chef Menna grew up in Detroit and cites his parents as the
biggest influence for his culinary journey. Both were from Italy
and are amazing cooks. “Everything was homemade, with love,”
he says of his childhood. He’s carried that love and passion
with him through his career, beginning the journey in his early
twenties under the tutelage of great chefs. Today, he enjoys
making all the club’s sauces and soups, and loves to experiment
with different wines that enhance the flavors. He also loves to
get creative with dessert and incorporates different spirits that
match up with the flavors.
One of Chef Menna’s goals is to ‘pay it forward.’ Training and
educating new chefs coming through the ranks is one of his
greatest joys – he has graduated nearly 100 apprentices in his
career.
“Everyone thinks I’m back there cooking everything,” Chef
Menna says. “In reality, I have a team. I allow my staff to do
their job and I just bail them out if they need it. I’m there for
support.”
Chef Menna’s scratch cooking is a benefit to club members who need to look no further than the club’s restaurant to
experience all things culinary, from house made pasta to flambé desserts. Chef Menna has a knack for cooking that can
satiate anyone’s palate, but perhaps more notable than even his most sought-after dishes is his heart, which remains
dedicated to the next generation of wonderful chefs."
