Form 5 Chemistry PBL Project 2: Making Ice Cream with Food Additives Name: Krishaanth Sharma Class: 5S2 Teacher’s name: Puan Chan


Introduction to Food Additives their importance in Ice Cream Making Introduction: ~Food additives are substances added to food products during manufacturing or processing to enhance their quality, texture, flavor, appearance, and shelf life. ~They can be natural or synthetic, and are regulated by food safety agencies to ensure that they are safe for consumption. ~Some common food additives include preservatives, emulsifiers, stabilizers, thickeners, coloring agents, and flavor enhancers. Importance: ~Food additives such as stabilizers, help to prevent the formation of ice crystals, which can make the ice cream gritty or hard. They also help to improve the overall texture and mouthfeel of the ice cream. ~Other Food additives include emulsifiers, that help to keep the fat and water from separating in the ice cream, which results in a smoother and creamier texture. ~Another common Food additives in ice creams are sweeteners, that help to provide the desired level of sweetness to the ice cream.


Description of experiment conducted, materials used and procedures followed Experiment: Making Ice cream with food additives. Materials: 2 cup (250ml), 3 tablespoons, 1 big plastic bags, 1 small plastic bag, 1 rubber band. Ingredients: Vanilla Essence, Full Cream Milk, Ice Cubes, Salt, Sugar. Procedure: 1. Mix 1 tablespoon of vanilla essence, 1 cup (250ml) of Full Cream Milk, and 1 tablespoon of sugar into small plastic bag. 2. Tie the small plastic bag tightly and neatly. 3. Add 1 cup of ice cubes and 3 tablespoons of salt into the big plastic bag. 4. Place small plastic bag into the big plastic bag. 5. Tie the big plastic bag tightly and neatly. 6. Shake big plastic bag for 30 minutes. 7. After 30 minutes, place big plastic bag in a cool area and let it rest for 2 hours. 8. After 2 hours, vanilla ice cream is produced.


Results obtained from the experiment, observations or trends Results: The recipe produces a classic vanilla ice cream with a creamy, smooth texture and a rich vanilla flavor. The vanilla essence acts as a flavouring food additive that provides the distinct vanilla flavor and aroma, while the sugar acts as a preservative food additive that not only adds to the sweetness, but helps prevent the formation of ice crystals on the ice cream. Observations: The addition of vanilla essence changes the colour of the ice cream base from white to light beige. Furthermore, The use of full cream milk creates a creamy texture and richens the flavor of the ice cream. Continuing on, the addition of sugar not only adds to the sweetness and flavor, it also prevents the formation of ice crystals on the ice cream.


Significance of the results obtained, and relevance to real world applications. ~The significance of this recipe and its use of food additives in the form of vanilla essence and sugar highlights the importance of food additives in the production of ice cream and other food products. ~Vanilla essence is a flavouring food additive used in many food products to provide a distinct vanilla flavor and aroma. It is vital to ice cream production as it provides vanilla ice cream its signature aroma and flavor. ~Sugar is a preservative food additive. It not only adds to the sweetness of the ice cream, but also helps prevent the formation of ice crystals on the ice cream. This is also vital to ice cream production as unwanted formation of ice crystals on the ice cream can cause undesired texture and inconsistency. ~The use of food additives in the process of making this ice cream is highly relevant to real world applications, food industries in particular. Food additives serves a important role in this industry as it helps in preservation, safety of the food, enhancing its flavor and texture, and prolonging its shelf life. In our instance, the use of vanilla essence as a flavouring food additive enhances the taste and aroma of the ice cream, making it far more appealing to consumers. Furthermore, the use of sugar as a preservative food additive helps in prevention of ice crystals forming on the ice cream, which will affect its texture and consistency, leaving to a more lasting and flavourful taste in consumers. The use of these high quality food additives such as vanilla essence and sugar is critical to meeting the expectations of current day consumers.
