BASQUE COUNTRY SHEEP’S SPECIALTY CHEESES
Based in the heart of the Basque Country, on the west side
of the Pyrenees Mountains, AGOUR is a traditional family
company strongly entrenched in its native area. They
specialize in sheeps’s milk cheeses from the Pyrenees and
Basque regions, among which the well-known famous PDO
Ossau-Iraty. Their cheeses have been rewarded
internationally with several Gold Medals.

COMTE: THE KING OF GRUYERE
Arnaud Comte is produced in a small village of Haut
Jura region in Eastern France. Jean Charles Arnaud,
founder of Fromageries Arnaud, discovered the
cheesemaking business with his grandfather, a
cheesemaker himself. There, he learned every single
rudiment of cheesemaking and affinage. The passionate mountain
and cheese affineur later discovered the second biggest fortress in
France - Fort des Rousses (during his military service) – with its miles of
gallery . He acquired it and transformed its stone-vaulted rooms into
amazing Comte aging caves.

The Gabriel Coulet family has been producing and
maturing Roquefort since 1872 when Gabriel Coulet
transformed his wine cellar into a Roquefort
maturing cellar as he has discovered a beautiful
“Fleurine” in his cave. After 130 years, the Dairy is still
run by the 5th family generation.
Thanks to this long experience geared to quality
and service, Gabriel Coulet has been amongst the
most prominent firm in the Roquefort family Business. We have always been
focusing on the quality of our product rather than on our market share.

French restaurants, the PDO Echiré butter is
also famous all around the world for its
flavor. It reveals a subtle taste of cream and
a delicate and soft texture. Available in

Echiré is part of the C.L.S. (Coopérative
Laitière de la Sèvre) which is one of the most
renowned Coops in Charentes-Poitou. They have been rewarded multiple

In 1981, Mr. Guilloteau, developped an innovative and
delicious cheese with the ultra-filtration process named
Pavé d'Affinois. Two years later, he created the
Fromagerie Guilloteau in the charming French village of
Pelussin.

A century-old cheese-maker in the Bastia
region, Pierrucci is located on the island of
Corsica in the South East of France.
Run by the 4th-generation cheesemaker
Michel Pierucci, the dairy collects the ewe’s
milk from 80 farms in the region, transforming
them into their line of cheeses, both traditional recipes and new
interpretations of Corsican classics.
