Ingredients

1. 3 small silver skin pickled onions
2. gin 65 ml (we used Hepple Gin)
3. dry vermouth 5ml (we used Noilly Prat)

Steps to make it

1. Start by making the garnish by charring the onions in a hot non-stick frying
pan to obtain colour (about 4-5mins) then set aside to cool
2. Pour all of the ingredients into a mixing glass or jug,
add cubed ice and stir for around 30 seconds to achieve the desired dilu-
tion. Strain into a chilled cocktail glass, or for extra flair pour it into a small
glass bottle and sit it in an ice-filled tumbler to act as a mini ice bucket. Serve
with a small liqueur or port glass on the side to pour it into.
3. Thread the cooled onions onto a cocktail stick and use to garnish the
drink.

Steps to make it

1.Squeeze the lime juice into a large chilled glass, add
mint and sugar and stir until the sugar is dissolved.
2.Fill glass with cruched ice and pour in the rum
Swizzle until the glass goes frosty.
3.Add a dash of soda water to taste. Garnish with mint
and serve with straws.

1. 3 raspberries
2. 5 mint leaves
3. 1 ounce simple syrup
4. 1 1/2 ounces citrus vodka
5. 1 ounce lime juice
6. 1 1/2 ounces Moët & Chandon Rosé Imperial Champagne, or anoth-
er comparable sparkling rosé, to top
Garnish: mint sprig
Garnish: raspberry
Steps to make it
1.In a shaker, muddle the raspberries and mint with the simple syrup.
2.Add the vodka and lime juice, fill with ice, and shake until well-chilled.
3.Strain into a cocktail glass.
4.Top with the Champagne and garnish with a mint spring and
a raspberry.
