Types of Bakery Products

Learning Objectives:

After reading this Information Sheet, YOU must be
able to:

1. Recognize the different bakery products;
2. Differentiate and identify yeast products,

quick breads and other bakery products; and
3. Participate in the discussion of the different

bakery products

Introduction:
Bread comes in multitude of forms. Traditionally, white bread is mainly

eaten although the white flour used has a low nutritional value. Today, a
range of breads with the addition of grains, flours of different flavors, and
additives such as onions, are produced commercially. Bread forms a major
staple food at homes and even in food establishments.

Popular Bakery Products
1. Yeast-Products Types
2.1 Lean-Yeast Dough
- are made of just the basic
ingredients to bread flour, yeast,
salt, a little sugar and
shortening.
Example:
Soft rolls
Loaf bread
Pizza
2.2 Soft Dough

Example:
Buns
Cheese Roll

2.3 Rich Yeast Dough
- contains added ingredients such
as more sugar, butter, nuts,
fruits, eggs and condiments
with milk too.

Example:
Ensaymada
Mongo Loaf
Sweet roll

2. Bagels
- a ring-shaped lean yeast bread or
coffe cake.

3. Biscuits
- a small, flaky, quickbread leavened
with baking soda or baking powder
for a flight, tender texture

4. Brownies
- is another popular bakery products
often served with hot beverages like
coffee,, milk or tea

5. Cookies
- are small, flat pastries usually eaten
alone as a snack or with coffee at
the end of a meal.

6. Croissants
- a cresent-shaped roll made from a
rich, rolled in yeast dough

7. Doughnuts
- a type of sweet deep fried pastry. It
can be fried or baked.

8. Fritters
- dried fried sweet or savory cakes
often made from chopped fruits or
vegetables coated in batter

9. Griddles

- are usually leavened with baking
soda or baking powder and are

quickly cooked on a very hot griddle
or waffle iron using very little fat.

- are small, cakelike baked good made
in a a muffin tin.

11. Puff are always made with water and
- butter that brought to a boil in a

saucepan, then flour is stirred in all
at once.

12. Pretzels
- a dough piece looped into various
shapes such as knots and are baked
with coating of salt

13. Quick Breads
- are made with chemical leavening
agents, principally soda and baking
powder.

14. Rusk a type of bread that are double
- baked.
