Background

Samantha set out with the aim to find a Chablis a little different to the mass styles available on
the market. Armed with her excellent blending skills, she sourced directly from a network of
growers – tasting their submissions blind and putting together our own unique blend.The style
Samantha sought was very specific – it had to marry depth on the palate with the finesse and
raciness of classic Chablis.The smooth chardonnay needed to match the steely climate from
the North whilst avoiding the eye-watering austerity which mars so many generics.We love
Samantha’s commitment to creating elegant and specific wine and think La Colombe is a true
example of her dedication and skill.

Key Points

• The vineyards are situated in the most Northerly part of the region of Burgundy (near
Auxere).This gives a cooler climate which allows the chardonnay grape to develop at a
perfect pace, creating wines which are crisp and acidic yet beautifully balanced with creamy,
full-flavoured tones typical of Burgundy.

• The most prevalent soil type in this Chablis is Kimmeridgean clay, so named after the village
of Kimmeridge in Dorset where it was identified.

• The Kimmeridgean clay is heavy in chalk content & sedimentary calcium deposits which
make the vines dig deeper to get their much-needed nutrients. Chardonnay particularly,
flourishes in these chalky soils.

• This is a certified vegetarian wine!

The Wine Style

Tasting Notes: Gunflint on the nose with a hint of smoke.The fruit on the palate is showing signs
of a creamy, buttery core but is restrained and soft. Crisp and dry on the finish.
Food Recommendation: Simply cooked fish, uncomplicated Cantonese cuisine or buttery roast
chicken.

The One-Liner

A true Mâconnais white with steely elegance and real finesse.

Tasting Note

This has vibrant citrus fruit and taut minerality. It is a truly good example of a
traditional white Burgundy and a delicious food accompaniment. Girouettes are
weather vains to be found on the numerous church spires typical of the Mâconnais.

Producer Details

Boutinot France’s new offices are in the middle of vineyards of St Vérand AC on the southern perimeter of the
Mâconnais. Drive five minutes down the road and cross the border into the northern rim of the Beaujolais cru, St.
Amour – the village in which Samantha Bailey, our winemaker responsible for Beaujolais & Mâconnais, got
married – all the hilly Beaujolais crus lie to the south in front of you. Unsurprisingly after twenty years in the
region, Samantha knows the Beaujolais and Mâconnais intimately and sources all our Beaujolais crus directly
from growers, selecting by blind tasting either single domaine or single vineyard wines. For Pouilly Fuissé
Samantha is given free rein to select and blend unoaked component wines at Guy Saumaize’s Domaine des
Maillettes. For our Mâconnais Samantha tastes all the cuves in the cellars of local producer, Cave de Charnay-
les-Mâcon, and is given equal free rein to select and blend Mâcon-Charnay for Réserve Personelle as well as for
both Domaine Les Perserons and St Véran Clos de Chevigne. All the wines Samantha blends remain unique to
Boutinot - they are not sold under other labels for other merchants

In The Vineyard Food Recommendations

The vineyards are on south-east facing slopes, a Poulet de Bresse with morels, vegetable risotto, fish
prime site at the foothills of Solutré opposite with beurre blanc, Lyonnais quenelles.
Vergisson. The vines are at least 40 years old.

In The Winery

Fermented in stainless steel with 15% aged in small
futs. Samantha worked closely with this domaine to
create a unique Boutinot blend, a traditional white
burgundy.

• Maybe in the north and east of France, this variety is often picked too early as the
rainy season fast approaches and growers fear to lose their crop; but down in the

Background

‘Le Fou’ translates as ‘The Madman’ as, it has long been thought, only a madman would try
to produce the perfect Pinot Noir in the Languedoc. Myth dispelled. Pinot Noir is generally
associated with cool-climate vineyards, yet the grapes for this wine come from the Aude Valley
in the Southern Languedoc. But we think Eric Monnin has achieved this, using Pinot Noir grapes
picked at optimum ripeness, vinified without the use of oak.

Key Selling Points

• The only mad thing about this wine is the price – unbeatable for this quality!

• Pinot Noir – the grape variety behind all great red Burgundy, now planted in the Aude in South-
ern France as well as Western US States and has become popular since the film ‘Sideways’

The Wine Style

Tasting Notes: A luscious, textural Pinot Noir displaying very intense, sweet berry fruit with
a savoury twist – the defining crackly edge of Pinot Noir streaks through the palate to a
mesmerisingly fruity, utterly drinkable, sensuous finish.
Food Recommendations: Lovely with duck or any game bird, also try with meaty fish such as
griddled tuna steak. Soft mouldy ripened cheeses such as Brie also work well.

Set up in 2003, Adria Vini is a winemaking venture jointly owned by Boutinot and Araldica Vini
Piemontesi, the leading co-operative in Piemonte. All areas of production, from grape selection
through to vinification, maturation, blending and bottling are meticulously overseen by Araldica’s
Claudio Manera and Lella Burdese. Working closely with growers and cooperatives, our aim is to
produce a range of authentic, well-priced wines from local grape varieties.

Key Selling Points

• Produced from grapes grown in northern Italy. The ripest grapes were selected from mature
hillside vineyards and hand harvested in early September.

• The extra ripeness allows the dark-skinned Pinot Grigio grapes develop a pink tinge which is
further enhanced by the addition of a small proportion of Pinot Noir grapes from the same
vineyards

• The grapes were harvested at optimum ripeness and transported to Adria’s cellars
where they were crushed and the skins left in contact with the juice for 12 hours at low
temperature before gentle pressing. After a slow, cool fermentation in temperature-
controlled stainless steel tanks the wine was bottled young to preserve freshness and aromas.

Tasting Notes: A fresh and fruity, slightly off-dry rose with delicate aromas of red berries. Crisp

salami, smoked chicken or seafood dishes.

Piemonte's most regarded white variety. Once on the point of extinction but
resurrected!

Tasting Note

A rich, dry white with ripe pear fruit, almond and tropical notes. The palate is plump,
soft and expressive, packed with stone fruit and apricots, with a delicious texture and
nutty, herbal finish. Hints of fennel, clove and citrus.

Producer Details

Araldica is Piemonte's largest and most progressive co-operative yet retains a small, family run company feel,
thanks to the inspired guidance of winemaker/manager Claudio Manera (whose father Livio was the co-op's first
winemaker in the fifties) and his wife Lella, also a winemaker and in charge of Quality Control. 80% of production
is bottled (an extraordinarily high percentage for a large co-operative) at the company's headquarters in the
Monferrato hills, home of the old cellars and a new winery, operating since September 2000. This is
complimented by two estates, each with it's own vinification cellars, La Battistina in Gavi (where Araldica is the
region's largest vineyard owner) and Il Cascinone. Claudio believes that effective management can preserve
that most important concern for the customer - value for money: "Our intention has never been to follow an idle
dream of making a great wine that is then impossible to find or difficult to afford. Our broader ambition has been
to provide a range that is both understandable and accessible. Quite simply, wine for drinking and enjoying."

In The Vineyard Food Recommendations

1989 saw the official recognition of Arneis di Roero Try with a flavoursome seafood risotto topped with
as a DOC wine. The grapes for Alasia Roero fresh basil and or fish such as trout, monkfish and
Arneis are sourced from vineyards on the Langhe snapper cooked in ginger and coriander. Best drunk
hills in the Piemonte region. The vineyards have a young.
south westerly aspect and are situated at altitudes
between 200 and 300m above sea level. The vines
have an average age of 20 years. Planting density
is 4000 to 4500 vines per hectare. The vines are
grown in limestone clay soil and trained in the low
Guyot trellis system.

In The Winery

100 percent tank fermented under temperature
control. Aged on fine lees with gentle stirring.

Background

Araldica is Piemonte’s largest and most progressive co-operative yet retains a small, family run
company feel, thanks to the inspired guidance of winemaker/manager Claudio Manera (whose
father Livio was the co-op’s first winemaker in the fifties) and his wife Lella, also a winemaker and
in charge of quality control. There are two estates, each with its own vinification cellar. Claudio’s
philosophy is “to provide a range of wine that is both understandable and accessible. Quite simply,
wine for drinking and enjoying.”

The name Alasia and the label design refers to a 10th century medieval princess (daughter of the
Emperor Otto) who eloped with a young Saxon night. Whilst on the run from her father the
couple hid out in the Monferrrato region, and the remains of the house where they lived (Ca’
d’Alasia) is near Castel Boglione.

Alasia wines provide a fresh modern twist on the prestigious DOC and DOCG wines of
Piemonte.

Key Selling Points

• Produced from 100% Muscat grapes cultivated in the Pavia region of Lombardia.
• The 20 year old vines are trained on low Guyot trellises in south west facing vineyards (at

altitudes 250 - 400m above sea level) with limestone-clay soils.
• Grapes are hand harvested around the middle of September.
• Temperature controlled fermentation in stainless steel.
• A distinctively grapey yet dry muscat combining the best local grapes with modern vinification

techniques.

The Wine Style

Tasting Notes: Zesty and aromatic with floral, ripe citrus, and honey overtones. Light and fresh
on the palate with crisp, lightly herbal notes, along with fresh grape and citrus fruits. Elegant and
crisp with a refreshing dry finish.
Food Recommendations: Lovely aperitif, or try with grilled plaice and tarragon, or goats cheese.
