QUALITY CONTROL

Edible Vegetable oils fat used for cooking. Deep frying plays a very important role in the quality of the
Namkeen processing & their shelf life. The various Namkeen like Bikaneri Bhujia, Aloo Bhujia, Kha a
Meetha, Peanuts, Potato Chips, Navratan and other

Also, the Edible Vegetable cooking/Frying oils plays a very important role in the control of
the quality and shelf life of Namkeens like Bikaneri Bhujia, Aloo Bhujia, Navratan, Peanut and
their mixtures thereof.

Basically, it is observed that the packed pouches of the Namkeens snacking the processing unit take
about minimum of two weeks’ me to reach the consumer for consump on.

However, FSSAI has not laid down any quality standard for Namkeen snacks. Hower Bureau of Indian
standard (3. 5. 5) has prescribed a quality standard is No. 152719-199? Which is not mandatory but
voluntary?

The types of oils used in deep frying have a tendency to turn rancid, incorporate dark color, due to which
the free Fa y acids turn are affected. Also the Peroxide Valor (PV) increase in the oil which incorporate

rancid odious.

It becomes important to control the value
of free Fa y acids and Peroxide Value of
the Edible Vegetable being used for
deep frying, which plays important
role in the taste of flavor of the
Namkeen snacks and shelf life.

To Control the increase in the FFA
and Peroxide. Edible Vegetable oil
with free Fa y Acids of less o.1 %
i.e. between 0.05 – 0.06. The
Peroxide value of the oil extruded
from the Namkeen snacks shall be
0.1m % and Peroxide Value of 5.0m e.g.
1000g. However, these values may control
the odious and taste.
