that she upped roots and made it her home
Love first blossomed for Jennifer some 20 years ago when she first
visited Jersey for a holiday, falling for the slow-paced way of life,
stunning scenery and friendly residents. When she returned to
Ireland, she packed her bags to start a new life in the Channel Islands.
“It was only supposed to be a holiday, but I fell in love with the
laid-back lifestyle and couldn’t wait to return,” recalls Jennifer.
“Within two weeks I was back for good and the rest is history.”
Upon her return, Jennifer worked as a care worker before
following her passion for jewellery, landing a job with a local
jewellers as a buyer. By 2015 her love of design culminated in the
fulfilment of her dream to open her own store, called Aqua, in the
centre of St Helier.
“I have always been creative and Jersey’s beautiful coastlines have
provided me with great inspiration,” says Jennifer. “Now nearly
everything in the shop is designed by me and features unique
materials that are a big part of the island’s heritage, such as Jersey
ormer shell and pink Jersey granite.”
Having lived on Jersey for over two decades Jennifer has got to
know the island inside out and is still as enamoured with it as she
was when she first arrived, noting its tranquillity as a real
attraction for tourists.
“It’s the ideal place to chill out and relax because everyone is so
friendly and the choice of beaches, shops and restaurants is
amazing,” enthuses Jennifer. “I love Plémont and Portelet bays
because they are stunning and secluded. If you go mid-week or
early in the morning you can have them all to yourself, but be
warned, the walk down is a bit of a hike.”
Jennifer makes the most of the island’s vast array of eateries when
meeting up with friends and classes Oyster Box in St Brelade’s Bay,
Banjo in St Helier and Crab Shack in Gorey amongst her favourites.
“The beauty of living on an island is that you are surrounded by
ocean, which means there are so many great fish dishes,” says
Jennifer. “The Oyster Box has fish, meat and vegetarian options on
the menu. The cocktail bar outside is wonderful because no matter
where you sit you’ll have a panoramic view of the sea.”
Island living clearly suits Jennifer who is as much in awe of
Jersey as she ever was, enthusing about the lifestyle, people and
scenery. She shares that she enjoys driving through the green grassy
lanes and walking the various costal paths around the island.
“The north-west of the island is great for path walks, as is the
south-west where you will find Corbière lighthouse,” says Jennifer.
“There are lots of great places to hike, caves to explore and
waterfalls to discover. The great thing is that it’s a small island, so
visitors can pack in a lot during their stay, but I’ve yet to meet
anyone that didn’t want to come back!”
