Ingredients:
Spinach (140 g)
2 haddock fillets or 2 sole fillets
2 tablespoons canola oil
1/4 cup finely chopped onions
1 grated carrot
1 tsp. salt (optional)
0.2 g ground pepper to taste
1/4 cup grated Parmesan cheese
Method:
Preheat the oven to 400 degrees Fahrenheit.
Prepare the spinach as follows: After a quick rinse and drain, place it in a pot or
saucepan without adding any water.
After mild shaking, the water held in the leaves is enough to cook them.
Season with salt, cover, and cook for 2-3 minutes over high heat, or until the leaves
wilt. Place the spinach in a colander and squeeze out any excess water before
placing it in a baking dish.
Pat the sole fillets dry before placing them on top of the spinach.
Take a frying pan and heat oil.
Chop the onion finely and grate the carrots before adding them to the pan.
Sauté for 3-4 minutes, season with salt and pepper, then serve on top of the fillets.
Cover the top with shredded cheese.
