Given the history of the Lanna Kingdom, it is not surprising that Northern Thai cuisine has been heavily influenced by Burma (now Myanmar). Some of the best-known dishes from the North are actually Burmese in origin. One of them is Khao Soy or commonly known as Chiang Mai noodles, a curry broth with egg noodles and meat. It was introduced to the Lanna Kingdom centuries ago by Burmese traders. Naturally, the Thais of Chiang Mai added local ingredients and spices to adapt the dish to their own taste. This was always relatively humble food even today is far more likely to be discovered on the streets than in restaurants. Nevertheless, as with noodles in Bangkok, there are plenty of aficionados higher up the social scale, and many Chiang Mai’s more prosperous residents—expat as well as Thais—cannot do without their regular fix. Two foodies, Shane and Sriphan Beary, felt that Khao Soy had fallen into a sad decline since the early 1980s with street vendors steadily cutting back on both the quantity and quality of their ingredients to keep costs down. Instead of just feeling upset, they decided to do something about it and the result is ‘Just Khao Soy’, which was opened on Chiang Mai’s Charoenphratet Road a few years ago. We discovered the place quite by accident and it had no hole in the wall—actually quite a trendy place, stylish and clean cut in design. However, this restaurant is permanently closed now. The menu was far from complicated, but ‘just’ Khao Soy was a misnomer. There was a decent range of Northern appetisers which can either be ordered separately or as a sample set called the artist’s paintbox or else diners could try the leaf-wrapped miang kham or Northern nam phrik dip dishes before the main dish came. Khao Soy can be messy to eat, but we were tied into gigantic bibs, which removed any worries. For some variety, my friend ordered fish, Burmese original style, with round noodles and maximum spiciness while I went for Chiang Mai classic, farmyard chicken on the bone with flat noodles. The latter was only medium spicy, as ‘Just Khao Soy’ threatened no concessions to the foreigners and I thought it was best to err on the side of caution. That proved unnecessary, but it was nothing that a little additional chilli paste couldn’t fix. Then he saw Joe West, a 58-year-old singer/songwriter performing on one of the stages that the airport management had set up under its one-of-a-kind ‘Music in the Terminal’ programme to entertain the tourists. People stopped and listened to him as he performed. When asked whether Nashville is still the heart of country music, Joe answered with hesitation, “Nashville has been growing by leaps and bounds, but music is still this town’s DNA.” 3 The first place the writer went to was Ryman, Nashville’s 127-year-old music venue. Ryman, a one-time church, is best known for the Grand Ole Opry country music radio show. Gatlin, a performer who sings there, still remembered the first time he visited Ryman in July 1971. “I’d just moved to Nashville, hoping to make it as a singer/songwriter. I’ll never forget watching Dolly Parton and Roy Acuff perform on stage. Still gives me chills thinking about it.” A quick walk around the corner from Ryman’s building is the most famous, or some might say infamous, neighbourhood of Nashville, known as Lower Broadway, home to dozens of full-lighted bars. This is the place where the tourists and locals find themselves cheap drinks, wild dancing and live country music. 4 These two places, Tootsies and Lower Broadway, are the hottest spots in Nashville for showcasing the would-be country music stars. The place reminded the writer of what Tim Nichols, the Grammy Award-winning songwriter, said, “Nashville is the place to be if you want to make a name for yourself in this business. If you want to hunt tigers, you have to go where the tigers are.” 5 The Mayor of Nashville, David Briley, said that Nashville is growing rapidly, evolving and becoming more multicultural. In the end, it is proven that the city’s musical legacy is still in good hands. Although the skyline is changing and parts of the city are becoming more modern, at its heart, Nashville is still a crazy town, full of big dreams for musicians.
